Vegetables Delight

Delightful meal for vegetarians. Use any and all vegetables in season. Serve with Roti or Paratha.

Cooking instructions

* Step 1

Heat Oil in a large pan. Add cumin seeds. Cook 1 minute. Add onions and cook 3 minutes. Add vegetable masala and cook 1 minute.

* Step 2

Add everything (except potatoes) in pan and add 2 tablespoon water. Mix and cook 2 minutes. Reduce heat and for 10 minutes covered.

* Step 3

Add Potatoes and cook for 5 more minutes. Check for salt and serve.
