Today I am sharing with you guys the recipe of homemade rasgulle.
Rasgulla is a milk based sweet made by curdling milk, draining the whey and kneading the milk solids to make balls. These balls are cooked in hot sugar syrup until light & spongy.

Cooking instructions
* Step 1
Knead the cottage cheese well to make it a smooth dough for 3 to 5 minutes.
* Step 2
Then add plain flour (maida) and knead again for few seconds.
* Step 3
Don't over knead to the extent that the cottage cheese turns greasy or soggy.
When you see the mixture turns smooth and no more grainy, then stop kneading.
* Step 4
Take small portions of this and roll to tiny balls.
* Step 5
Add water and sugar in a heavy bottom pan.
* Step 6
Cook on high flame until becomes boiling.
* Step 7
Then add rusglle and cook
* Step 8
Until becomes double in size and spongy.
* Step 9
Add chilled water in a bowl and dip rusglle in it.
* Step 10
Boil the remaining syrup and thicken it. Then remove rusglle from chilled water and soak in sugar serup for 1 hour.
* Step 11
Rasgulle are ready to serve.
