Kale and chorizo soup

I grow kale and most of it gets eaten by my two guinea pigs which love it. An ophthalmologist friend of mine mentioned it is a good food to prevent macular degeneration so I decided to give it a proper try. And I agree with Timmy and Tommy ( my pets) it's lovely. I may chop and freeze it to add to my soups later in the year. Hmmm

Ingredient

Food ration :

Cooking time :

30 mins
2 clove

garlic

50 grams

cubed chorizo

Cooking instructions

* Step 1

Sweat the onion on a low heat so that they don't colour but soften. For about 7 minutes.

* Step 2

Add chopped garlic and chorizo in cubes and sautee for 2 minutes

* Step 3

Add the cubed potatoes and cook for further 3 minutes

* Step 4

Add the stock. Bring to the boil and simmer for 10 minutes or until potatoes are tender. (You can season now but I found this soup tasty enough with the chorizo flavour alone plus the stock seasoning)

Mash a bit the potatoes

Bring back to the boil. Add finely shredded kale and cook further 5 minutes.

Stir and serve
