Vegetable Medley

A tasty easy side dish. I am not one to like bell peppers but I do like red, yellow, and orange ones. The have a pepper flavor that is milder then the green ones. The potatoes really work well in this dish. I love all the vegetables in this dish so I figured I would cook them together. There is never any leftovers on this dish.

Cooking instructions

* Step 1

Dice the pepper, and slice the squashes. I also striped half the zucchini.

* Step 2

Slice the potatoes the same as the zucchini and yellow crookednecked squash. Melt the butter. When melted add the vegetables and coat all the vegetable pieces. I left the skins on the potatoes.

* Step 3

Add the spices. Allow to cook covered try and caramelize the vegetables especially the potatoes. Serve I hope you enjoy!!!
