La Frittata/ Easy Omelet
La frittata/ easy omelet is a simple, versatile dish. A great way to incorporate left over pasta or vegetables, or even both as in this recipe.

Cooking instructions
* Step 1
Slice and chop onion and garlic.
* Step 2
Add to pan with 3 Tbs of olive oil.(or more to taste)
* Step 3
Once fragrant, add cooked vegetables. Stir to incorporate.
* Step 4
Whisk the eggs. Add the cheese, chopped parsley and salt and pepper, if desired.
* Step 6
Add egg mixture and stir to spread evenly in pan.
* Step 7
Cover, and allow to cook for 5 to 10 minutes on medium heat until the sides of the omelet release easily.
* Step 8
Take a plate, and flip the omelet.
* Step 9
Slide back into pan and cook an additional 3 to 5 minutes.
* Step 10
Remove from pan and garnish with parsley. Can be served hot or cold.
