Perfect When the Weather's Hot! Spicy Chilled Miso Soup
I wanted to create a dish that can be enjoyed even during the hot summer when we tend to lose our appetites.
Cooking instructions
* Step 1
Heat the dashi stock in a pan. Dissolve the miso and doubanjiang. Transfer to a container and chill in the refrigerator.
* Step 2
Sprinkle cucumber slices with a little salt and leave for 10 minutes. Squeeze out tightly. Combine with the tuna.
* Step 3
Put rice in a bowl and pour the chilled soup over it. Add the cherry tomatoes plus the cucumber-tuna mix from Step 2, and sprinkle sesame seeds. Drizzle sesame oil to finish.
