Shiitake Mushroom Soup
We often make this soup, vegetable and egg, mushroom and egg. And my mother always made this soup with spring onion, mushrooms and egg. #GoldenApron23
Cooking instructions
* Step 1
I always keep dried Shiitake mushrooms in refrigerator. Soak dried mushrooms in much water.
* Step 2
Thinly slice shiitake mushrooms and spring onion.
* Step 3
Add the shiitake mushrooms and green onions to the water containing the dashi stock and shiitake water then bring to a boil. Season with salt and soy sauce to taste.
* Step 4
Mix the egg and add the egg while swirling the boiling soup.
