Trim any excessive amounts of fat off the lamp. Put the lamb into a Ziploc bag add salt on top, and then add the water. Open the top of the ziplock to just a little opening push all the air out of the bag as you can and zip it back up. Refrigerate for at least one and a half to two hours. * Step 4

Add the wine and let it stew for 40 minutes during here and there occasionally. After 40 minutes give it a good stir and let it simmer a little bit more bubbling mix up the slurry of cornstarch and water. Stir gently, pour in the slurry, and allow it to thicken. You don't have to use the whole amount of slurry just enough to get the thickness to where you would like it.
