Italian Panino (Vegetarian)
The vegetarian version of the Italian Panino is made with simple and easily available ingredients, but is still a delightful and healthy breakfast sandwich. I have used a 6 inches baguette, but it can be made with any breads you have with you.

Cooking instructions
* Step 1
Melt the butter or heat the grill pan and drizzle some olive oil to toast the sandwich
* Step 2
Slit the bread from the center into two halves
* Step 3
Slice the cheese into rings
* Step 4
Drizzle some olive oil on the base slice
* Step 5
Add 2-3 rings of mozzarella cheese
* Step 6
Add the tomtoes and rocket leaves
* Step 7
Add a pinch of salt and crushed black pepper to season
* Step 8
Cover with the other slice
* Step 9
Press gently and add the sandwich to be grilled on both sides on the hot grill pan
* Step 10
Take off heat once done and serve immediately
* Step 11
Tip: traditionally a panini pan is used to grill the sandwiches, but this sandwich being versatile, can be made on any grill pan too
* Step 12
Tip: for a non vegetarian version, use slices of baked salmon/minced and boiled chicken/canned tuna, etc as a filling. The tomatoes and arugula form the Essence of the sandwich along with the fresh mozzarella
