Garlic Spinach gravy in Coconut Milk

Garlic Spinach gravy in Coconut Milk

healthy, tasty and perfect for the season. Being cooked in coconut milk, adds that extra taste and body to this curry

Ingredient

200 grams

spinach leaves

1 teaspoon

cumin seeds

1 teaspoon

coriander seeds

25 millilitres

thick coconut milk

1 tablespoon

oil

1/2 teaspoon

turmeric powder

1/2 teaspoon

cumin powder

as needed

Water

Cooking instructions

* Step 1

Rinse and chop the spinach leaves, without discarding the tender stems

* Step 2

Heat oil in a wok and temper with Bay leaf, cumin and coriander seeds, green chilli

* Step 3

Once the seeds splutter, add the garlic and sauté on Low heat until they turn light brown

* Step 4

Then goes in the onions

* Step 5

Sauté them until translucent

* Step 6

Add the tomato next, followed by turmeric and cumin powders

* Step 7

MIx well and add a dash of water

* Step 8

Cook till tomatoes soften

* Step 9

Throw in the spinach leaves next

* Step 10

Season with salt

* Step 11

Mix and sauté for 2 minutes

* Step 12

Once the leaves wilt, add the coconut milk and mix well

* Step 13

Cook covered by adding little water(enough to let the gravy simmer to desired consistency)

* Step 14

Once done, take off heat and transfer to a serving bowl

* Step 15

Garnish with toasted sesame seeds and serve immediately with accompaniment of your choice (goes well with rice and all flat breads)

* Step 16

Tip: you can reduce/ increase the spice content and the coconut milk as per your choice.
