Aam Paapad (Raw mango sheets)
Children as well as adults droll over a mango sheet or aam paapad. Made with tangy raw mango and seasoned with spices, it’s a perfect snack to feast on this summer!

Cooking instructions
* Step 1
Wash, deskin, desired and slice the mangoes
* Step 2
Boil them using a cup of water until tender
* Step 3
Let cool and blend into smooth paste
* Step 4
Transfer the mango paste into a non stick pan or wok
* Step 5
On medium heat stir the paste for 2-3 minutes and then add the spices and salt
* Step 6
Keep mixing on Low heat now
* Step 7
Meanwhile grease an A4 size plastic sheet/parchment paper and place it on a rectangular tray
* Step 8
When the mixture starts to thicken and is bubbling, it’s time to take off heat
* Step 9
Pour the paste onto the greased paper on the tray
* Step 10
With the help of a spatula, spread the mix evenly
* Step 11
Leave the mix to dry in natural sunlight (it may take 2-3 days based on the intensity of the heat)
* Step 12
For a quick fix, dry in the oven with the oven door open, on the lowest temperature (it may take 3-4 hours)
* Step 13
When the surface appears to be dry, check by pressing down gently to know if the sheet has dried completely
* Step 14
Take off mango sheet from the plastic /parchment paper and cut into rolls
* Step 15
You may choose to roll a chunk in a toffee cover, to delight kids
