Cooking instructions
* Step 1
Roasted and salted sunflower seeds are extra delicious so let’s start by adding the sunflower seed kernels, salt and water in a pan and roast it on low flame until well roasted. Set it aside to cool.
* Step 3
In a mixing bowl, add the flour, baking soda and baking powder and mix it well.
* Step 4
Next to make the cookie dough, in a large mixing bowl beat together butter, brown sugar and granulated sugar with the help of an electric mixer for about 4-5 minutes until fluffy. Next add in coconut oil, eggs and almond essence and mix until well combined.
* Step 5
Add the flour mixture to the wet mixture and beat until well combined. Stir in the oats, shredded coconut and roasted sunflower seeds.
* Step 6
Pre-heat the oven to 175•C.
Measure a spoonful of the cookie dough and drop it on a baking sheet lined with parchment paper. Place in oven and bake for 13-15 minutes, until golden brown around the base. They will still be soft. Allow to cool for 5-10 minutes on the cookie sheet, where it will firm up a bit. Then transfer it to a wire rack to cool completely.

Super Delicious and Flavorful Coconut Sunflower Seed Cookies are ready. Serve immediately or store the cookies in an air-tight container at room temperature for few days. Enjoy it with a glass of milk or cup of tea or coffee.
