Coconut Sunflower Seed Cookies

Cooking instructions

Roasted and salted sunflower seeds are extra delicious so let’s start by adding the sunflower seed kernels, salt and water in a pan and roast it on low flame until well roasted. Set it aside to cool.

In a mixing bowl, add the flour, baking soda and baking powder and mix it well.

Next to make the cookie dough, in a large mixing bowl beat together butter, brown sugar and granulated sugar with the help of an electric mixer for about 4-5 minutes until fluffy. Next add in coconut oil, eggs and almond essence and mix until well combined.

Add the flour mixture to the wet mixture and beat until well combined. Stir in the oats, shredded coconut and roasted sunflower seeds.

Pre-heat the oven to 175•C. Measure a spoonful of the cookie dough and drop it on a baking sheet lined with parchment paper. Place in oven and bake for 13-15 minutes, until golden brown around the base. They will still be soft. Allow to cool for 5-10 minutes on the cookie sheet, where it will firm up a bit. Then transfer it to a wire rack to cool completely.
