Parsi Egg Akuri

#cookpadindia This is a Parsi style creamy scrambled eggs with a variation. Here eggs are scrambled with a creamy semi - soft spicy onion tomato masala .Milk and cream makes this dish soft and creamy and spices add flavour which tastes incredibly good .This creamy Egg Akuri from Parsi Cuisine can be mopped up with toasts, pav/buns or roti and makes for a healthy breakfast which is prepared within 10 minutes.

Ingredient

1 tbsp

oil

1 tsp

ghee

3 cloves

garlic minced

1/4th tsp

cumin seeds

1/4th tsp

turmeric powder

2 tbsp

milk

As Per Taste

Cooking instructions

* Step 1

Break eggs in a bowl. Add salt, a pinch of red chili powder, or chili flakes, and whisk till light and frothy.

* Step 2

Heat oil and ghee/ clarified butter in a pan. Add cumin seeds. When they splutter, add minced garlic and grated ginger. Saute a few seconds and chopped onion. Saute till fragrant and translucent. Add chopped tomato and a pinch of salt. Cook until tomato is pulpy. Add chopped green chilies, turmeric, red chili flakes, or 1/4 th tsp red chili powder. Add whisked egg and milk.

* Step 3

Lower the heat to medium flame and stir gently making sure the texture is not firm. Add garam masala, fresh cream, or malai, and give it a toss. Sprinkle chopped coriander over the eggs and switch off the flame.

Serve hot healthy Parsi Egg Akuri along with buttered bread toast, bun pav, or roti.
