#GA4 #week17 #shahipaneer Shahi paneer nawabi is a rich flavourful Hyderabadi recipe. Ingredients like onion,ginger garlic paste, whole spices,curd,cashewnuts,sesame seeds alongwith rich cream or malai enhances the richness of its creamy white gravy. This rich gravy pairs very well with tandoori roti,phulka,naan,pulao or jeera rice.

Cooking instructions

* Step 1

Cut paneer into medium size cubes.Smear little salt and set aside.Make a paste of onion,ginger,garlic,curd and green chillies.Soak cashewnuts and sesame seeds in warm water for 5 minutes.Grind it to a smooth paste alongwith thick malai.

* Step 2

Heat 2 tbsp oil and lightly fry the paneer as it is soft and fresh and not frozen ones.Set aside.Add ghee and sprinkle cumin seeds and half crushed whole garam masalas and black peppercorns. When they splutter, add the onion,ginger garlic,curd and green chillies paste and saute till there is no raw smell.

Now add the cashewnut sesame seed paste, malai and toss.Add coriander powder,black pepper powder,garam masala,crushed kasoori methi, salt and pinch of sugar to taste.Saute till oil leaves sides. Add milk and 1/4 th cup water if gravy is very thick.

* Step 4

Add paneer,chopped coriander and toss lightly.Sprinkle 2 drops mitha attar or saffron soaked milk and serve hot with tandoori roti,phulka, naan,pulao or jeera rice.
