Methi Matar Pulao or Fenugreek Green Peas Pulao

#GA4 #week19 #methi_pulao #post_2 Methi Matar Pulao is a quick and healthy rice preparation cooked with two winter vegetables fenugreek leaves and green peas.Methi is rich in iron,vitamins, calcium and essential nutrients.Combined with green peas it makes for a delicious one pot meal in lunch,dinner or can be packed in lunch box and pairs very well with raita,salad or any gravy.

Cooking instructions

* Step 1

Soak rice for 10 minutes.Boil water in a deep pan with 1 tsp salt. Add rice and cook till it's 85% cooked. Drain and set aside.Heat ghee and oil in a wok.Sprinkle cumin seeds,half crushed whole garam masala and add chopped onion.Fry till light brown.

* Step 2

Pluck methi leaves from the stems.Wash and pat dry.Add parboiled green peas to the frying onions.Then add methi leaves,chopped coriander,bay leaves,ginger garlic and green chillies paste,garam masala and cashewnuts.Fry for 3 minutes till a nice aroma comes from methi leaves.Now add cooked rice, and toss.

* Step 3

Cook covered for 5 minutes till rice is fully cooked.Sprinkle ghee and 1 tbsp lemon juice and toss.Serve hot with raita or with dal or any gravy. This recipe can also be pressure cooked by simply frying onion,cashewnuts and peas alongwith ground paste and chopped methi leaves.Then add soaked rice,toss all,add salt and 2.5 cups water and pressure cook upto 2 whistles.Release steam and lightly fluff the rice and serve.
