Cold Potato Salad

#icookathome #goldenapron3 #week10 #ingredients-imli, curd This is a very healthy salad as hung curd is used instead of mayonnaise or cream.Adding boiled chickpeas and tamarind chutney makes this a delicious side dish to main course meals.Serve healthy potato salad chilled.

Cooking instructions

* Step 1

Soak black chickpeas overnight or atleast 5 to 6 hours.Pressure cook chickpeas with little salt and 1/4 th cup water,4 to 5 whistles or till done.Boil potatoes and slice them into semi circles.Assemble all ingredients.Chop onion,cilantro.Make a tangy sweet and sour tamarind chutney by boiling tamarind with little salt, sugar,red chilli powder and roasted cumin powder.Add 1 pinch red chilli powder and 1/4 th tsp cumin powder to curd.Add 1 tbsp water and mix well.

Mix all ingredients in the sliced boiled potatoes.Toss well.Sprinkle pinch of red chilli powder and cumin powder.Then garnish with chopped coriander (cilantro) and aloo bhujiya. Serve chilled healthy potato salad.
