Rava Upma with corn and vegetables

This is a traditional recipe of rava upma but made tasty colourful and healthy with corn,peanuts and vegetables.This can be served for breakfast and also as a snack item or packed for tiffin and keeps you full for quite a longtime.

Cooking instructions
* Step 1
Dry roast sooji.Chop carrots and beans and lightly steam or boil them.Dry roast sooji.Set aside. Heat oil in a wok.Fry the peanuts and set aside. Sprinkle mustard seeds and hing(asafoetida).When they splutter,add grated ginger and chopped onion.Fry lightly and add tomato and fry.Add the steamed vegetables and sweet corn and toss.
* Step 2
Add roasted rava or sooji,peanuts and fried curry leaves.Add salt and pinch of sugar to taste.Add just enough water just to cover the sooji and vegetables.Toss and bring to boil.Boil for few minutes till sooji,corn and vegetables are mixed properly.Add chopped or broken chillies and sprinkle lemon juice.Grated fresh coconut may be added but optional.Add chopped coriander leaves.Serve hot in breakfast or snack or pack it for kid's tiffin.
