Crispy raw jackfruit cutlet (Echorer cutlet)

This is a traditional recipe most popular in Bengal.Though there are quite a few ingredients to make this delicious melt in mouth cutlet,a coating of breadcrumbs gives it a crispy touch.It is crispy from outside and soft inside.

Cooking instructions
* Step 1
Cube and boil raw jackfruit in little salted water.Discard water.Boil 1 potato and mash it with the jackfruit.Also add freshly ground bread slices.Add turmeric,red chilli powder,meat masala, garam masala, chopped coconut,gramflour (besan),salt and sugar to taste,ginger garlic paste,chopped green chillies and mash all.Heat 2 tbsp oil and fry chopped onion.Then add the mashed lump and toss till dry and well fried.Sprinkle raisins and chopped coriander and toss.
* Step 2
Make cutlets out of the fried mix.Make a semi thick batter of cornflour and maida.Dip one cutlet in it and toss in breadcrumbs.Allow it to set for an hour in fridge.Then fry the cutlets golden brown.Serve with any dips of your choice or hot and sweet tomato sauce.
