Sweet potato black bean enchiladas with grilled chicky

Cooking instructions
* Step 1
Combine all marinade ingredients into a gallon size zip lock and marinate for at least 4 hours
* Step 2
Preheat oven to 375 degrees. Chop sweet potatoes into 1/2in cubes. Toss with olive oil and spices. Bake 25-30 mins
* Step 3
Make enchilada sauce. Medium heat add garlic and onions. Add spices and stir for a minute. Add remaining sauce ingredients. Boil for 5 mins then simmer for 5 and remove from heat
* Step 4
Mix black beans with chopped bell pepper and jalapeño
* Step 5
Take out the sweet potatoes, toss with black bean mixture
* Step 6
Put 1/2 cup enchilada mix in piled 9x12 pan
* Step 7
Roll up enchiladas with cheese, insides, 1 tbsp enchilada sauce, more cheese. Put in 9x12 pan. Top with cheese and remaining enchilada sauce. Bake for 30 min
* Step 8
Meanwhile heat the grill and grill chicken 6-10 min per side
* Step 9
Put all crema ingredients into blender and blend until smooth
