Microwave “Grilled” miso eggplant
Miso eggplant is usually deep fried or roasted in the oven before coating with miso paste. Using this method of microwaving without covering the dish, gives the eggplant a similar texture without the oily mess. And also works well if you do not want to switch on your oven. Takes less than 10 mins! Recipe is modified from a Japanese website.
Cooking instructions
* Step 1
Cut eggplants into 1 inch rounds. Wash and soak for about 5 mins and than drain well.
* Step 2
Toss eggplants with sesame oil. Microwave on medium (700W) for 6 mins. (No need to cover)
* Step 3
Mix miso and mirin. Smear paste thinly over eggplants. Microwave on medium 1.5 mins. (No need to cover)
* Step 4
Serve with toasted sesame seeds (optional)
