Masala Dal Khichadi
My daughter is very fond of Khichadi and I like to try out various combinations of dals and temperings while making it for her.

Cooking instructions
* Step 1
Wash & soak the Chana Dal seperately in water for 20 mins.
* Step 2
Wash & soak the mung dal & rice seperately for 10 mins.
* Step 3
Heat the ghee in a pressure cooker.
* Step 4
Add the cumin seeds, hing, dry red chilli & turmeric powder, saute briskly for a few seconds.
* Step 5
Add the ginger-garlic, saute briskly for a few seconds.
* Step 6
Add the green chillies and onions, fry until translucent.
* Step 7
Add the tomatoes, saute until they turn soft.
* Step 8
Add the tori & potatoes, saute with the masala. You can use any other veggies of your choice.
* Step 9
Add the soaked dals & rice, mix well. Add at least 3-4 times the water in ratio.
* Step 10
Immediately add the coriander & rasam powders. Add salt, mix well.
* Step 11
Add half of the chopped fresh coriander, put on the lid and pressure cook.
* Step 12
After the first big whistle, leave to simmer for 15 mins on low heat.
* Step 13
Take off heat, let the pressure come off on its own.
* Step 14
Garnish with the remaining coriander leaves. Serve hot, topped with ghee & with dahi, pickle and papad on the side.
