Muffin and egg sandwich
Cook and Serve restaurant style breakfast in under 5 min. This is an english muffin and egg sandwich recipe using microwave.
Cooking instructions
* Step 1
Beat 1 egg in a shallow cup, add half of chopped onion, capsicum and chopped green coriander. Add salt and pepper as per taste. Repeat with 2nd egg. Put it in microwave for 1.5 min. Check if not completely cooked, microwave for 30 sec more.
* Step 2
While you are waiting for egg to cook half the muffins and toast lightly, keep lettuce and tomato slice on 1 side sprinkle salt. Put egg from cup and cover with other half muffin. Serve with hot sauce, mayo (optional)
