* Step 1

Preheat oven 250°C.

* Step 2

Squid and cut into 1cm thick rings. add Garlic, Ginger, Salt, Black Pepper and Chilli, massage well, and set aside.

In a separate bowl, combine ‘Panko’ Bread Crumbs and Olive Oil, mix well. add Squid pieces to the ‘Panko’ mixture

Spread evenly in a single layer if possible, and bake for 15 minutes or until golden.

Cuban Inspired Black Bean Rice

This recipe has been inspired by a Cuban rice dish, ‘Arroz Congri’. I cooked it in my rice cooker just like Japanese ‘Takikomigohan’, so it is super easy to cook. The colour of the dish is supposed to be darker, but the liquid from the can of Black Beans that I used was not really black. If you cook Dry Black Beans from scratch, make sure you save the black water and use it to cook Rice. You can add Bacon. See the photo below.

Ingredient

1 can (400 g)

Black Beans

1 teaspoon

Ground Cumin

1 teaspoon

Ground Paprika

2 teaspoons

Dried Oregano

2 cups (180 ml)

cup) Long Grain Rice

Cooking instructions

* Step 1

Drain canned Black Beans and save the black liquid in a measuring jug. Add Water to make 450ml in total. Add Salt to the liquid and season it. *Note: If you cooked Dry Black Beans from scratch, use the black water.

* Step 2

Heat Olive Oil in a frying pan, cook Onion and Garlic until soft, then add Capsicum and all spices, and mix well. Set aside and cool. *Note: Capsicum doesn’t need to be soft.

* Step 3

*Optional Bacon: If you prefer, you can add 100g Bacon. Cut into small pieces and cook with Vegetables. As Bacon is salty, you need to alter the amount of Salt in ‘Step 1’. *Note: See the photo below.

* Step 4

Wash Rice, drain, and place in rice cooker’s inner pot. Add the black water mixture, spread the stir-fried Vegetables and drained Black Beans, but DO NOT stir. Add Bay Leaf, and press COOK/START button to start cooking.

* Step 5

When the Rice is cooked and steamed, gently mix to combine. *Note: Add extra Salt if required. 1-2 tablespoon Lemon Juice can be added.

This is a variation of ‘Kakiage’ Tempura, and the mixture has a resemblance to the ‘Okonomiyaki’ mixture because Cabbage is commonly used. However, you can use other vegetables such as Onion, Broccoli, Cauliflower, etc. You can shallow fry the mixture into mini pancakes if you prefer.

Ingredient

Egg

1 teaspoon

Sugar

2 teaspoons

Soy Sauce

Cooking instructions

* Step 1

Chop up all vegetables into small pieces. You can coarsely grate them. If any water comes out from the vegetables, remove the excess water.

* Step 2

Cut Squid into very small pieces as well. Today I cut everything into about 8mm size pieces.

* Step 3

Combine all ingredients in a mixing bowl.

* Step 4

Slide some bite-size clumps of the mixture into 170°C to 180°C oil and deep fry. Turn them over a few times. When nicely browned and crispy, transfer to a rack and drain the oil.

* Step 5

*Note: You can shallow fry the mixture into mini pancakes if you prefer.

One day I tried to cook ‘Sukiyaki Don’ replacing Beef with Soy Meat (Soy Protein) and the result was too bland. You can’t just replace Beef with Soy Meat. Extra flavours are needed in the sauce. So I added Ginger, Sesame Oil and Chilli this time. The dish tastes much better and it still tastes like Sukiyaki. If you are Vegan, simply omit the Eggs.

Ingredient

5 tablespoons

Soy Sauce

2 tablespoons

Mirin

2 tablespoons

Sugar

1/2 tablespoon

Sesame Oil

Cooking instructions

* Step 1

Soak Dry Soy Meat (Soy Protein) in plenty of warm water for 30 minutes. Drain and squeeze to remove excess water, then soak in fresh water, drain and squeeze to remove excess water again. *Note: This process is to remove unpleasant smell from Soy Meat. It might be unnecessary, or you wish to repeat a few times.

* Step 2

Combine all the Sauce ingredients in a small bowl. Slice Onion and Carrot. Cut Wombok about 2cm.

* Step 3

Heat Oil in a large frying pan and cook Soy Meat, Onion, Carrot and the hard parts of Wombok for a few minutes.

* Step 4

Add the soft parts of Wombok and Shiitake, add the Sauce, cover with a lid and let everything cook in the sauce. When the Vegetables are soft, add Spring Onions, crack and place the Eggs apart from each other onto the mixture and let them half cooked.

Half fill a bowl with freshly cooked Rice and cover with the Sukiyaki mixture with one Egg each. *Note: You might be interested in Beef Mince version 'Sukiyaki Don'.

Here is another dish you can make with the humble Canned Tuna. This is a 'Mezegohan' dish. Rice and other ingredients are cooked separately and mixed together. You can actually use leftover cooked rice for this dish. In that case, you don’t need to cook anything. Just mix all ingredients. Anyone can make it.

Ingredient

2 tablespoons

Dry Cut Wakame

1 tablespoon

Soy Sauce

1 teaspoon

Sesame Oil

1 teaspoon

Sugar

Cooking instructions

* Step 1

Soak Dried Cut Wakame in cold water until soft, drain and squeeze to remove excess water. *Note: If Wakame pieces are large, break (or cut) into smaller pieces before soak.

* Step 2

Place the squeezed Wakame in a mixing bowl, add all other ingredients except for Spring Onion, and mix well.

* Step 3

Add warmed cooked Rice, and mix to combine. Sprinkle with some Spring Onion and enjoy. *Note: Spring Onion can be mixed in if you prefer.
