#HFS #Chakkarapogal popular sweetened rice based dish from south india which is also hugely popular in srilanka and thailand especially with the tamil community. there are several names across south india and it is also known as huggi in kannada or in karnataka. the dish is specifically made during the pongal festival with moong dal, jaggery and rice with freshly harvested grain...

Ingredient

2+ 1/4 cup

milk / water

¾ cup

jaggery/gud

¼ cup

water

2 tbsp

ghee

10 whole

cashew nuts

2-3 tbsp

raisins

Cooking instructions

* Step 1

Firstly, in a pressure cooker take ½ cup rice and ¼ cup moong dal (both soaked for 15 minutes) add in 2¼ cup milk and pressure cook for 4-5 whistles. make sure the dal and rice is cooked completely. further in a pan take ¾ cup jaggery and ¼ cup water.

* Step 2

Keep stirring till the jaggery melts completely. now filter the jaggery water into cooked rice-dal mixture.add ¼ cup water or more adjusting consistency as required.

Simmer for 2 minutes or till jaggery combines well with rice-dal mixture. add in 2 tbsp ghee and give a good glossy.

Now in a small kadai heat 2 tsp ghee and fry 10 whole cashew nuts raisins and clove.

* Step 5

Pour the fried cashew and kishmish into sweet Pongal.

* Step 6

Also add 1/4 tsp cardamom powder and small pieces edible camphor mix well.

Finally, sweet sakkarai Pongal is Ready to offer to goddess....

* Step 1

Preheat a heavy bottom vessel having lid. It must have a cup of salt at the base and upon that a stand. Next grease the baking dish with oil, dust atta and spread it evenly all around, remove the extra atta dust. Keep aside. Next in a mixing bowl, take dates syrup and oil. Mix. Next add salt. Mix. Add essence and mix all well till homogeneous.

Next add curd into the mixture. Mix it too, till all of them combine nicely. Next take a sieve and sieve down wheat flour, baking powder and baking soda.

Mix all slowly in one direction. Don't overdo. Add milk gradually and continue mixing gently till you get the perfect smooth, bit flowing consistency of the cake batter.

As batter is ready, don't let it sit. Take the greased baking dish. Pour the batter into the dish. Even it. Tap at least two, three times to remove any air bubbles. Now put cashewnut bits on top. Put this cake for baking. Bake in slow flame for at least 30 minutes without any disturbance. After 30 minutes poke with a knife/ tooth pick and check. If it comes out clean then switch the flame off, else bake for some more time. This ratio of cake got baked in 35 minutes.

As the cake is baked. Take it out. Don't leave it in the vessel as condensation will occur and moisture will spoil your cake. So take out and keep it on a wire rake to cool and come to room temperature. As it cools, demould it carefully.

Children's day is round the corner so....try these eggless chocolate muffins for your kids...a sweet treat for them... Happy kids...Happy Mommy!!

Ingredient

120 ml

milkmaid

3/4 cup

curd

60 ml

oil

1/2 tsp

cocoa powder

1 pinch

salt

1/2 tsp

baking soda

as required

* Step 1

In a mixing bowl put milkmaid, curd, cocoa powder, salt and oil. Mix everything till you get a homogeneous mixture. (Well, you can sift and add cocoa powder along with the flour, but I have added it here itself).

Next take a sieve and sieve down wheat flour, baking soda and baking powder. Mix gently so as to combine all. Next add milk to adjust consistency and get a proper cake batter consistency. Do not overwork your batter.

As you get so...put the muffin mixture into your moulds. Side by side preheat the vessel with salt in it. Put a stand on which you will place your muffin tray. Next you have to keep your muffin mould ready. I have used a silicon mould. So pour in your muffin batter into the mould upto 3/4 level of the cavity. I have put a bit more or else my batter could have gone wasted. Put Chocolate vermicelli and give a tap and give a slight mix.

Now put these up for baking in the preheated vessel. Put the lid and do not disturb till 35 minutes. Keep the flame slow.

Bake for 45 minutes...mine took that much time. You can bake in a very slow heat for 35 minutes and then poke and check... If your knife comes out clean,then it's done,else bake them till done.

Let the muffin come to room temperature. Demould then. Next time to serve!! Make a fine powder of sugar and cocoa powder. Dust this powder on the muffins. Put Chocolate syrup and you are ready to go!!!

* Step 1

Take a cake tin, grease and keep it ready. Next...In a mixing bowl, put powdered sugar, oil and curd. Mix very nicely till you get a homogeneous mixture.

* Step 2

Next take pieces of apple, essence and crushed walnuts. Add into the wet mixture. Mix well.

* Step 3

Next take a sieve and sieve down atta, baking powder, baking soda and salt. Mix all in one direction.

* Step 4

While preparing batter, side by side preheat oven at 180 degrees for 10 minutes.

* Step 5

Now take the baking tin, pour the prepared batter. Even and tap it. Bake it in the preheated oven for 25 minutes. Both rods on. Check, if required bake for 5 minutes more. Take the cake out of the oven and let it cool down. Demould.

* Step 6

Next take a pan and prepare the caramel. Put dry fruits into the caramel, mix and pour it onto the cake. Let it cool.. The crusty crunchy apple walnuts cake is superb

In a mixing bowl, put sooji, maida, sugar, salt, coconut and mix.

Next add baking powder and baking soda. Mix. Add oil and curd, mix. Add milk and adjust consistency.

Let the batter rest for 5 minutes. Meanwhile preheat the oven at 180 degrees for 10 minutes. After batter has rested, check consistency,since sooji must have absorbed the liquid, so accordingly add little milk and adjust. Add nuts and dry fruits of your choice. Pour batter into a greased baking dish.

Put for baking for 30 minutes. Check after 25 minutes. After it's baked, let it cool. Demould. Make sugar syrup. Put the sugar syrup on the cake. It will absorb and become moist and softer.
