Cooking instructions

* Step 1

Firstly, in a pan take ½ cup jaggery and 2 tbsp water. stir and dissolve the jaggery keeping the flame on medium. once the jaggery melts, add 1 tsp butter and give a good mix.

* Step 2

Boil for 6-7 minutes or until the syrup turns frothy. check the consistency, by dropping syrup into a bowl of water, it should form hardball and cut with a snap sound. else boil for another minute and check. further add 2 tbsp cashew and give a good mix. pour the mixture over greased plate and allow to cool completely. break into pieces and transfer to a zip lock bag. crush the praline into pieces. keep aside.

* Step 3

Firstly, in a large bowl take 2 cup heavy cream and 3 drops yellow food color. beat on low speed. you can also use a whisk to beat the cream. beat until stiff peaks are formed. now add 1 cup condensed milk and 1 tsp butterscotch essence. if you do not have access to butterscotch essence, you can use vanilla extract.

* Step 4

Beat and mix until everything is well combined. further, add 3 tbsp of prepared praline and mix gently. transfer the ice cream mixture into a glass box / bowl 🍜/ box top with few praline pieces and cover tight. now freeze for 8 hours or until it sets completely.

Garnish with calamine crush 🥰 pieces

Ingredient

1 cup

moong dal

3 pods

cardamom

Cooking instructions

* Step 1

Firstly, in a pan dry roast 1 cup moong dal on low flame.

Roast for 15-20 minutes or until moong dal turns golden and aromatic.

* Step 3

Cool completely and blend to a fine powder.

* Step 4

Transfer the moong dal powder into Kadai.

* Step 5

Add ¼ cup ghee and roast on low flame.

* Step 6

Continue to roast for 10 minutes or until the mixture turns golden brown.

* Step 7

Transfer to a bowl and cool slightly.

* Step 8

Now prepare powdered sugar by blending ½ cup sugar and 3 pods of cardamom.

* Step 9

Transfer the powdered sugar, cashew nuts, almonds, and pistachios, over the mixture and mix well.

Crumble and mix well making a moist flour.

milk powder

Cooking instructions

* Step 1

Firstly, in a kadai heat 3 cup milk and 1 cup cream.

* Step 2

Also, add 2 tbsp milk powder.

* Step 3

Alternatively, add khoya / khova / mava for rich flavour.

* Step 4

Stir continuously, making sure everything is combined well without any lumps.

* Step 5

Get the milk to a boil stirring occasionally.

* Step 6

Add 2 tbsp almonds, 2 tbsp pistachios, 2 tbsp cashew and ¼ tsp kesar.

* Step 7

Boil the milk for 10 minutes or more stirring occasionally.

* Step 8

Keep boiling till the milk reduces to half or thickens.

* Step 9

Add ¼ cup sugar and stir until the sugar dissolves.

* Step 10

Boil for another 5 minutes, or till milk thickens.

* Step 11

Cool the mixture and transfer to a small matka or cups.

* Step 12

Cover the matka with cling wrap or aluminium foil and freeze for 8 hours.

* Step 13

Finally, garnish matka malai kulfi with chopped nuts and serve chilled.

* Step 1

Firstly, in a large blender take 3 bananas and 1 cup of milk.

Blend banana to a smooth puree.

Transfer the banana puree to a large bowl.

Add ¼ cup honey and 2 tbsp saffron milk.

Also add 1½ cup of a variety of chopped fruits like grapes, strawberry, mango, orange, raspberry, pomegranate seeds, and apple.

Ingredient

Cooking instructions

* Step 1

Firstly, in a pressure cooker heat 3 tbsp ghee and saute ½ inch cinnamon, 2 pods cardamom and 2 cloves until it turns aromatic. now add ½ cup daliya and roast on low flame. roast for 5 minutes or until the daliya turns aromatic.

* Step 2

Further, add 2 cup hot water and mix well. cover and pressure cook for 5 whistles or until daliya are cooked completely. open the cooker and add ¼ cup jaggery and ½ cup water. mix well making sure the jaggery melts completely.

Cook for 5 minutes or more until the jaggery thickens slightly. now in a small kadai heat 1 tbsp ghee and add 2 tbsp cashew, 2 tbsp almonds and 2 tbsp raisins. roast until the nuts turn golden brown. add in roasted nuts and ¼ tsp cardamom powder. mix well.

Add in roasted nuts and ¼ tsp cardamom powder. mix well. finally, enjoy fada lapsi garnished with chopped nuts, grated coconut and kesar.
