Cooking instructions

* Step 1

Firstly, in a large mixing bowl take maida, rava, and sugar.

* Step 2

Also add fennel powder, dry fruits, and cardamom powder.

* Step 3

Further, add milk.

* Step 4

Mix well making sure there are no lumps in the batter.

* Step 5

Add water as required and mix well.

* Step 6

Make sure the batter is of smooth pouring consistency.

* Step 7

Further, whisk the batter for at least 5 minutes.

* Step 8

Cover and rest the batter for 30 minutes.

* Step 9

Pour the batter into hot oil/ghee.

* Step 10

Once the malpua starts to float, splash oil over malpuas.

* Step 11

And also press gently with the help of a perforated spoon.

* Step 12

The malpuas will puff up like poori.

* Step 13

Now fry both sides till they turn golden brown.

* Step 14

Drain the malpuas onto the kitchen towel to remove excess oil now soak the malpuas in the hot sugar syrup.

* Step 15

Rest for 10 minutes making sure both the sides of malpua are soaked well.

* Step 16

Finally, serve malpuas hot with rabri and garnished with a few nuts.

* Step 1

Firstly, in a large mixing bowl take rava and curd. additionally add sugar, ginger, chili paste and salt. mix well to form a thick batter.

Rest for 30 minutes or till rava absorbs moisture. further add water as required and mix well. get the dhokla to idli batter consistency.

Additionally add eno fruit salt. mix gently till the batter turns frothy. transfer to the greased plate. steam the dhokla batter for 12 minutes. prepare the tempering by heating oil. further add mustard seeds, jeera, sesame seeds and hing. once the mustard seeds splutter add in curry leaves and green chili.

Saute for a while and once the tempering splutters spread the tempering over dhokla. also sprinkle coriander leaves. and cut the dhokla to desired shape.

Finally serve soft and spongy rava dhokla with green chutney.

* Step 1

Firstly, in a large kadai heat 2 tbsp oil and splutter 1 tsp mustard, ½ tsp urad dal and few curry leaves. also roast 3 tbsp peanuts till they turn crunchy. now add ½ onion, 1 inch ginger, 2 green chilli and saute well. furthermore add 3-4 tomato and saute till they turn soft and mushy.

Now add vegetables like 3 tbsp peas and 2 beans. saute till the vegetables get cooked well completely. add in ¼ tsp turmeric, ¾ tsp salt and ¼ tsp sugar. saute on low flame for a minute.

Pour 3 cup water and add 1 tbsp ghee. get to vigorous boil and mix well. keeping the flame on low start adding roasted rava slowly, stirring continuously in another hand. cover and simmer on low flame for 3-5 minutes or till tomato upma is cooked well. finally, serve tomato rava upma / uppittu with coconut chutney, rava kesari or plain.
