This is one dish close to my heart and it's from my childhood memories. I used to have these spicy street style egg bhurji whenever I visited my Nani place at Sambalpur. Ingredient

* Step 1

Place a pan with oil and heat it. Next add chopped onion, green chillies and grated ginger. Saute all together till onions become translucent. Next add chopped tomato.

Next add salt as needed for the onion and tomato. Put turmeric powder and red chilli powder. Mix well. Let it cook till tomato becomes soft.

Into the sauteed onions and tomato, add in whole eggs or separately beat them and add.

Let it be as such in slow heat for some time. Then kut kut kut... Break the omlette into small pieces.

Let it get sauteed for some time. Go for occasional mixings. Next add garam masala, black pepper powder and mix. Finally add chopped fresh green coriander leaves. Give a nice gentle final mix and serve!!

* Step 1

In a mixing bowl, put besan, rice flour, salt, and turmeric powder. Mix. Then add chopped palak patta. Add water and mix to make a medium-thick batter. Add ginger garlic paste and mix. Add Kasuri methi and baking soda in the end when the oil is hot and ready! Don't forget to add a tsp of warm oil to the batter, it will make your pakodis crispy.

Add crushed ajwain and garam masala to the batter and mix. Add chopped onion and red chili powder as per your taste.

Take small portions from the batter and put them into medium to high heat oil. Fry till golden brown and crispy. Drain extra oil and serve hot with chai 🙂

* Step 1

Check out the link provided above for making idlis. After making the idli batter, temper it with the above-mentioned ingredients. Use a button idli mould to make the cut mini mini sized idlis. As idlis are ready, keep them aside to cool down. As it cools down, demould the idlis.

Next heat a kadhai with oil. Splutter mustard seeds and cumin seeds. Add curry leaves. Put salt, red chilli powder, sambar powder and a dash of hing. Add very little water. Mix the masalas. Keep the heat slow.

Next put the prepared button idlis into the masala and give the nice gentle mix so that, all the button idlis get well coated with the masala.

cumin seeds

1/4 tsp

fennel seeds

Prepared masala paste

1/2 tsp

garam masala

Cooking instructions

* Step 1

In a mixing bowl, put cleaned fish. Add the above-mentioned ingredients for marination. Coat the fish pieces well, cover and keep aside at least for 30 minutes.

Next as per the above-mentioned ingredients make the masala paste.

* Step 3

Next heat mustard oil. Fry the fish pieces, strain the oil and keep them aside.

Next heat a kadhai with mustard oil. Splutter mustard seeds, cumin seeds and fennel seeds. Add chopped onion. Saute till brownish. Next add ginger garlic paste. Saute for some time.

* Step 5

Next add the prepared masala paste. Mix. Add salt, turmeric powder, red chilli powder. Mix and cook till masala leaves oil

Next add hot water to make the gravy. Put fish masala. Let it come to boil. Then mash a small boiled potato very nicely and add it into the gravy. This makes the gravy thick.

* Step 7

Continue cooking in medium heat. As it comes to boil, add garam masala. As it comes to boil, add the fried fish pieces. Give a gentle mix. As fish gets nicely combined with the gravy, add finely chopped coriander leaves and slit green chillies.

* Step 8

Do not cook anymore. Switch the flame off. Serve immediately.. Enjoy with hot steamy rice and salad..

* Step 1

Start by washing and marinating the chicken with the above-mentioned ingredients. Next prepare masala paste and keep aside.

* Step 2

Next place a kadhai with oil and heat it. Splutter cumin seeds. Put chopped onion. Fry till brownish. Next add the prepared masala paste. Add as needed salt. Mix and cook till masala leaves oil. Add little water as needed.

* Step 3

Next add the marinated chicken. Srir fry in medium to high heat for some time. Next cover and cook it till chicken is softened.

* Step 4

As chicken is cooked, add the blanched peas. Give a nice gentle mix. Let it cook without cover for some time. Next add chicken masala, little water and mix gently. Let all flavours combine well with each other.

* Step 5

Next add fresh cream. I have used Ghar ki malai. Churned it with little milk. Add the cream and give a mix. Let cream get well combined with all ingredients.

* Step 6

Next add garam masala. Mix it too. Add as much water needed as per your preference for the gravy. It's better not to make it runny.

* Step 7

Finally put kasuri methi and mix. Let the curry settle down for some time. Then give a nice gentle mix and serve hot
