Soak the dry fruits for 15 minutes. Soak kesar in milk for 15 minutes.

Next take a blender jar. Put all the soaked dry fruits, sugar, kesar milk, essence and half of the milk.

Blend nicely. Add rest of the milk and blend again.

* Step 1

Take a heavy bottom pan, boil milk. Add essence and then sugar.

* Step 2

Add salt and mix. Let the sugar dissolve. Next add the saffron soaked in milk.

Mix. Keep the flame slow. Add kishmish.

Add cashews and chopped almonds. Mix all and let it be on slow flame. Next take a small bowl put milk at room temperature. Add rice flour and mix.

Make a lump free slurry. Add this slurry to the saffron milk and continuously mix. Keep the flame slow.

Gradually the rice flour custard starts thickening. Stir and let it get cooked at slow flame. Add milk to adjust consistency. As rice flour's rawness is lost...you know it's ready... Transfer it into serving dishes and chill it.

Take 2 apples, cut it into small pieces. Heat water, add salt, fennel seeds.

As it boils, add cinnamon powder. Now add pieces of apples.

Cover and cook till apples become soft. Keep consistency as you like.

* Step 1

Take a wok, add 2 tbsp ghee, heat it.

Lower the flame, add chopped nuts, fry them till light brown. Do not overcook them. Take out in a dish, keep aside.

* Step 3

Now add rest of the ghee in the same wok, add Sewaiyan, fry them until light brown on low flame.

In goes 1/2 cup water & sugar, mix it well. (Water quantity is adjustable). Cook it covered until almost cooked.

Open the lid, add nuts, kewra water & elaichi powder, stir fry until dry.

Now add milk powder, mix it well. Cook it till powder is mixed nicely. U can add khoya in place of milk powder.

Turn off the flame. Cover it for a minute.

* Step 1

For Gravy....a). Take a pan, add oil, heat it. Add zeera, choti elaichi, dalchini & kali mirch sabit, saute it for a sec.

In goes onion, stir fry until pink. Add ginger garlic, saute it for a minute.

Now add tomato 🍅 & kaju, mix it well. In goes green chilli, stir fry it for 2 minutes.

Add 1 cup water, give a stir. Cover it after a boil. Cook it until tomato becomes mushy. Cool it down. Grind it to a fine puree, strain it, keep aside.

For Stuffing....a). Take a mixing bowl, add all the given ingredients.

B). Add salt & pepper powder, mix it well, keep aside.

For Koftas....a). Take a mixing bowl, add all the given ingredients of kofta. Mix it thoroughly till smooth.

Take small portions, roll it, flatten it, fill it with lil portion of Stuffing. Seal the edges, roll it again, make kofta. Prepare all the koftas in the same manner. Keep aside.

Let's make gravy first... a). Take a wok or deep bottom pan, add oil & ghee, heat it. Add tejpatta, saute it for a sec.

In goes diluted ginger garlic paste,, saute it until rawness is released. Add Kashmiri red chilli powder, stir it, add very lil water to avoid burning.

Now add Gravy Masala, add 1/2 cup water, mix it well. Cook it for a minute. In goes haldi, dhania & red chilli powder & also salt, mix it well.

Lower the flame, cover it with the lid, cook it until oil has oozed out. Open the lid, increase the flame, add garam masala powder & sugar, mix it well.

Now add fresh cream, mix it well, cook it covered on low flame until oil has surfaced.

Open the lid now, increase the flame, add 1/2 cup water, stir it. Give a boil. Lower the flame, cover it again, cook it for 3 minutes.

* Step 15

Turn off the flame, open the lid after 15 minutes.

Take a wok, add good amount of oil, heat it. Moderate the flame, deep fry koftas, 2 at a time very carefully till light brown. Make all koftas in the same manner. Keep aside.

Take a dish, add gravy & kofta, garnish it with fresh cream & slitted green chilli.
