These baked oats with added protein whey are so delicious and simple to make. Here I've added a seasonal Christmas twist and stuffed it full of mincemeat. Such a treat! Perfect finished with a dollop of brandy cream.

Ingredient

Cooking instructions

* Step 1

Preheat your oven to 180 (fan). In a bowl add the oats, baking powder and whey and stir together.

* Step 2

Crack in the egg and add the milk. Stir well until a thick batter is created with no dry lumps remaining. Spray oil over the skillet until coated.

* Step 3

Spoon in half the batter, spreading it out evenly and up to all edges. Then, spoon the mincemeat over the top leaving a 1 inch gap around the edges. Add the other half of the oat mixture on top, spreading it out until no mincemeat is showing.

* Step 4

Bake for 8-10 minutes until risen and springy to the touch. Leave to cool for 1-2 minutes, dust with icing sugar and add a dollop of brandy cream. Enjoy whilst warm and cakey! :)

* Step 1

Mix together the crushed gluten free digestives, Christmas mincemeat, dairy free cream cheese, icing sugar and melted dairy free dark chocolate Place in the fridge to firm up, about one hour

* Step 2

Divide into 10, roll into balls and place on a sheet of baking paper Dip in the melted dark chocolate and place back in the fridge to set

* Step 3

Decorate with the melted dairy free white chocolate

Ingredient

5 tablespoons

icing sugar

6 teaspoons

water

Cooking instructions

* Step 1

Preheat the oven to 180°C / 350°F

* Step 2

Roll out until the sheet of pastry Cut out 12 equal sized circles

* Step 3

Spread the mincemeat onto six of the pastry circles leaving about 1cm of space around the edge of the pastry, this stops the filling leaking everywhere when you bake the pastries Brush the space you have left at the edge of the pastries with the beaten egg

* Step 4

Place the remaining six circles of pastry on top of the filled slices Seal the edges by pressing down with a fork all the way round the perimeter

* Step 5

Place on a baking sheet lined with parchment paper Cut a little steam hole in the middle of each pastry

* Step 6

Brush the pastries with the beaten egg Bake in the oven for about 15 minutes or until golden brown

* Step 7

Mix together the icing sugar and water Drizzle over the pastries and top with the Christmas sprinkles

icing sugar

Cooking instructions

* Step 1

Preheat the oven to 180 oC Line a muffin tin with 8 paper cases

* Step 2

Beat together the caster sugar and dairy free spread until light and fluffy Whisk in the eggs one at a time

* Step 3

Stir in the gluten free self raising flour and Christmas mincemeat Divide between the 8 muffin cases

* Step 4

Top a sprinkle of brown sugar, flaked almonds and ground cinnamon Bake in the oven for 20 minutes

* Step 5

Allow to cool and serve dusted with icing sugar

* Step 1

Preheat the oven to 170 oC Grease and line a loaf tin

* Step 2

Whisk together the caster sugar, eggs, dairy free milk and melted dairy free spread Stir in the gluten free flour and mincemeat Spoon into the loaf tin

* Step 3

Bake for 50 minutes

* Step 4

Remove from the loaf tin and allow to cool Dust with icing sugar before serving
