Naan Bread Pizza (Spicy Chorizo) 🍕

Here's another version of my naan bread pizza, spicy chorizo! So easy to make and really delicious.

Ingredient

* Step 1

Heat up your grill to a medium heat. Take the naan bread and flick a few droplets of water into the underside of it then grill it for a couple of minutes. Remove and turn it the right way up to put on the toppings.

* Step 2

Spread over the tomato pasta sauce evenly up to the edges. Add a few drops of hot sauce to your personal taste onto the tomato base. Then sprinkle over the cheese. Season with salt and pepper.

* Step 3

Place over the chorizo slices, then grill the pizza until the cheese is melted and bubbly and the chorizo slightly crisp on the edges.

* Step 4

Sprinkle over a little bit of dried basil, serve and enjoy! :)

This little juicy burrito makes a perfect lunch. It's low in calories and packed full of flavour. It would also make a great meal on the go or as a packed lunch.

Ingredient

* Step 1

Lay out the tortilla wrap and add the cheese first in the centre but off little to one side, so you'll have room to roll and fold the wrap later. Next place on the lettuce and beans, chillies and onions.

* Step 2

Add the chicken pieces and season with salt and pepper. Add the soured cream and drizzle over some sriracha sauce.

* Step 3

If you wish to keep the burrito neat, here it's a good idea to place it over a piece of foil, that has a few cm to spare around the edges of the tortilla. Carefully tuck the wrap over the fillings and then fold the ends towards the centre and then roll it up tightly in the foil. Twist the ends of the foil to seal it. Eat and enjoy! :)

Easy Gnocchi Bollo Bake

This quick and easy bake is so delicious and is ready in 20 minutes! Makes a hearty lunch or dinner that's low in calories and fat. Ideal if you're short on time and need to make something fast.

Ingredient

250 g

gnocchi,

1/2 tsp

dried basil,

Cooking instructions

* Step 1

Heat a medium saucepan over a medium to high heat and spray in a layer of cooking oil. Once hot add in the onions and fry for a couple of minutes then add in the beef mince and brown off. Season with salt and pepper.

* Step 2

Add in the tomato paste, dried herbs and garlic. Stir until everything is combined. Turn the heat down to medium low. Add in around 150-200ml water (just enough to make a nice thick sauce), and bring to a gentle simmer.

* Step 3

Add in the gnocchi and stir. Leave to simmer for 2 minutes. If needed, add a dash more water to loosen up the sauce.

* Step 4

Once the sauce has thickened and reduced once the gnocchi has been added transfer the mixture to an oven proof dish. Preheat your grill.

* Step 5

Scatter over the grated cheese and season with more salt and pepper. Also sprinkle over some extra oregano. Place beneath the grill and leave until the cheese is golden, melted and bubbly.

* Step 6

Serve up once it's cooled for around 1-2 minutes and enjoy! :)

This is one of my favourite quick salads to make, and it's so delicious. It's also perfect if you are following a low carb or low calorie lifestyle. Here I've used turkey thigh mince, but lean 5% fat beef mince or a meat free alternative are also a great options.

Ingredient

Cooking instructions

* Step 1

Heat up a frying pan over a medium to high heat. Spray oil in to cover the base then once warm add in the turkey mince. Fry and brown off, season with salt and pepper and the garlic granules. Stir together, and fry until cooked through. Turn off the heat and leave the frying pan on the hob to keep warm.

* Step 2

In a large shallow bowl add in the shredded lettuce. Add the sliced onion and tomato. Also add the pickles.

* Step 3

Top with the warm turkey mince and scatter over the grated cheese. Dress with burger sauce. Eat and enjoy!

Beef & Bean Cheesy Layered Hotpot

A delicious and warming meal, perfect for the colder months. This layered hotpot is sure to bring a smile to your face. A savoury beef and bean mix layered between thinly sliced potatoes and covered in a bubbling layer of cheddar cheese.

Ingredient

1/2 tbsp

malt vinegar,

1 pinch

dried Thyme,

Cooking instructions

* Step 1

Heat the oil in a large saucepan and add in the red onion and malt vinegar. Cook it over a medium heat whilst stirring occasionally until it softens up.

* Step 2

Next add the beef mince and grind over some black pepper and a pinch of salt to season. Brown off the mince and turn the heat down lower. Add in the dried herbs and garlic granules. Stir everything together.

* Step 3

Add the tomato paste, 3 tsp of beef gravy granules and then the tin of baked beans and Worcestershire sauce. Combine the ingredients and then add the ketchup. Season with a touch more salt and pepper to taste. Add a small dash of water in to loosen up the mix slightly if needed (around 1/4 small mug full), and then set aside.

* Step 4

Take a medium sized casserole or perspex dish and spoon in 1/3rd of the beef and bean mix to the base of the dish and spread it around to form a level layer. Then take 1/3rd of the sliced potatoes and layer it over the beef. Season with a little salt over the potatoes.

* Step 5

Layer on the next 1/3rd of the beef and bean mix, then again 1/3rd of the sliced potatoes. Keep going until you have placed over the final layer of potatoes. Again season with a little salt and pepper.

* Step 6

Preheat your oven to 200 (fan). Cover the hotpot with foil and place on a baking tray in the middle shelf and bake for around 1 hour 45 mins. After that, remove the foil and grate over the cheese. Bake for a further 10-15 minutes uncovered.

* Step 7

Once the cheese is bubbling and golden and the potato layers cooked through, remove from the oven and allow to sit and cool for a couple of minutes before serving up. Grate over a little extra cheese if desired. Enjoy! :)
