Here's how I make my shrimp fried rice. If you enjoy this dish from your local takeaway then I'm sure you'll love this version. Plump prawns with bite and savoury, salty grains of rice with a mild kick of chilli make this very morish indeed!

Ingredient

Cooking instructions

* Step 1

Heat a wok up over a high heat. Add the oil. Once hot add in the beaten egg. Leave to sit in the wok for around 20-30 seconds until it begins to solidify then break it up into small pieces then scrape to one side of the wok. Add in the whites of the onions plus the chilli. Fry for a few seconds.

* Step 2

Add in the prawns. Cook until the water that's released from the prawns evaporates off. Add the msg and white pepper, stir fry with the prawns for a few more seconds. Next add the oyster sauce. Stir to coat the prawns.

* Step 3

Now add the cooked rice, soy sauce and fish sauce. Break the rice up in the wok and toss everything together. Fry for around 2-3 minutes until the rice grains are 'popping' in the wok and there's little moisture remaining in the rice. Lastly add the greens of the spring onion. Fry until wilted then serve up and enjoy! :)

Standard larder, fridge and veg rack ingredients make this very quick and easy. This mixture also reflects what vegetables I wanted to use up! #WastenotWantnot

Ingredient

2 cloves

garlic, sliced

Cooking instructions

* Step 1

Boil the beans in salted water for 5 minutes, drain, cut into 2 cm pieces and set aside for Step 3 below.

* Step 2

Heat the oil in a wok and gently fry the shallot for 1 minute, only stirring to avoid sticking. Add the garlic, pepper, chili and mushrooms and cook for a further 3 minutes or until the ingredients are softened but not burnt, stirring gently but frequently.

* Step 3

Increase the heat, add the rest of the vegetables including the beans and stir-fry for 4-5 minutes, or until al dente.

* Step 4

Add the Mirin, prawns, soy sauce, stirfry sauce, stir thoroughly then immediately add the noodles.

* Step 5

Cook for 1-2 minutes, turning and tossing frequently. Quickly season to taste and serve onto warm dishes.

Prawn, Chorizo, Chili & Leek Spaghetti

This is a development of one of my earlier recipes, expanded with more ingredients. I used fresh spaghetti today but dried is fine. Please note that the flavours are pronounced, hot and spicy: not for the faint-hearted. But we love it.

Ingredient

250 g

spaghetti

1 tsp

sugar

1 knob

butter

Cooking instructions

* Step 1

Bring a saucepan of salted water to the boil and cook the spaghetti according to instructions so that it’s at the al dente point ready for Step 5 below. Drain in a colander and add a knob of butter. Retain 100 ml of the pasta water in case needed at Step 6.

* Step 2

Heat a dry frying pan and fry the chorizo for 2 minutes on each side, until it has only just turned brown. It needs to be cooked but not burnt! Set aside on kitchen paper to absorb any surplus fat. Keep warm.

* Step 3

Add the garlic, chili and leek to the frying pan and cook, occasionally stirring gently, for around 5 minutes or until the leek has softened.

* Step 4

Stir in the tomatoes, sugar and white wine and cook for a further 2 minutes, stirring occasionally.

* Step 5

Stir in the coriander and lime juice. Add back the chorizo, then add the prawns and cook, stirring, for 60-90 seconds. Remember that the prawns are already cooked and only need heating. Taste and add a little pepper if wished.

* Step 6

Add the spaghetti, stir gently but thoroughly to coat the pasta. If looking dry, add a little of the retained pasta water - but note that this is often unnecessary. Then serve immediately onto warmed pasta dishes/plates.

Ingredient

25 g

butter

15 g

Parsley

Cooking instructions

* Step 1

Cook rice as per packet

* Step 2

Cut spring onions into 5mm pieces, clean and cut in half the prawns and chop the parsley.

Drain rice, then melt half the butter with parsley in the rice pan. When melted re-add the rice. Stir for 1min.

Melt rest of butter in large frying pan and add the spring onions. Fry for 2mins

* Step 5

Add the prawns and a good splash of brandy. Cook until half the brandy has evaporated.

Add cream and simmer for 3min

* Step 7

Add the parsley rice to the cream and stir so all the rice is coated. Season with salt and pepper

5 . Prawn Congee

200 gram

Cooked rice

700 ml

Water

1/2 tsp

Sugar

1/2 tsp

Fish sauce

Cooking instructions

* Step 1

Put the water, chicken stock cube and cooked rice into pan. Bring it to boil, then simmer for 15 minutes.

* Step 2

Remove the pan from the heat.

* Step 3

Use an electric handheld blender to blend the rice soup for 30 seconds ( blend for 1 minute if you prefer a smoother consistency.

* Step 4

Return the pan back onto the hob, add the cooked prawns, sugar, light soy sauce and fish sauce. Then simmer for another 3 minutes.

* Step 5

Put the Prawn Congee into the serving bowl and top with a poach egg, spring onion, sliced cakoi/youteao and ground black pepper.
