Shrimp is another ingredient which goes well with scrambled egg. I have some champignon mushroom left in the fridge, so I try cooking them and add to my scrambled egg. It turns out awesome.

Boil the shrimp: In a saucepan, add water and turn on high heat. Quickly boil the shrimp until it become opaque pink. Set aside for cooling. Cut into cubes.

Stir fry Champignon mushroom: In a saucepan, heat 1/2 tbsp vegetable oil with medium-high heat. Add garlic and cook until fragrant. Add champignon mushroom. Season with a little bit of salt and pepper. Stir fry for 2-3 min until it become brown and tender. Set aside. Clean and dry the saucepan.

* Step 4

Egg mixture: In a bowl, add egg, mushroom soy sauce, and black pepper. Whisk vigorously. Add milk and mix well.

Prepare a serving platter. Although I prefer eating this recipe with rice, bread is a really good choice.

In a saucepan, heat 1/2 tbsp vegetable oil with low heat. Add egg mixture. Add boiled shrimp and champignon mushroom. Gently fold the egg by scraping across the bottom and side of the pan. Don’t overcook the egg.

Put scrambled egg with shrimp on top of the rice before serving.

This makes for a light but tasty lunch. Most of the time is spent boiling the egg. The rest takes only about 5 more minutes. This recipe is for one serving: simply multiply the ingredients for more people. I use cold-smoked trout with this dish but use hot-smoked if that’s your preference.

* Step 1

Hard-boil the egg (from cold bring to boil then 8-9 minutes). Plunge into cold water, then peel and slice.

* Step 2

Meanwhile toast a thickish slice of bread and butter it.

* Step 3

Lay the smoked trout strips on the toast and then the egg slices on top.

* Step 4

Sprinkle capers to taste. Enjoy!

I am always looking for new ways to throw together vegetables and an extra duck egg. You can, of course, use a chicken egg. Or emu, if you're feeling adventurous. I love breakfast for lunch. And this recipe is so customizable based on your dietary needs, preferences and what is currently in your kitchen or backyard.

Ingredient

1 slice

bacon

1 tbsp

Duck fat

1 clove

garlic

Cooking instructions

* Step 1

Heat duck fat (or bacon fat or grass-fed butter/ghee) in cast iron skillet.

* Step 2

Chop brussel sprouts and potatoes into small pieces, to your preference. Smaller cooks faster. And toss in skillet.

* Step 3

Chop bacon and add to pan.

* Step 4

Chop garlic, and set aside until potatoes and brussel sprouts have cooked through. Add to pan and stir frequently until garlic is brown.

* Step 5

Cook duck egg in separate pan to your preference. I use a small egg pan and cook my egg in Kerrygold over easy so I can pop my yolk over my hash. Poached egg would also be great.

* Step 6

Salt and pepper to taste. Transfer hash to plate. Top with egg.

* Step 7

(Optional Adjustment) If you're increasing the quantity to serve a whole family, instead of cooking your eggs separately, make little "bowls" in the hash for each egg. Simply crack the eggs into the hollows, cover the pan, and let the eggs cook to your preference and serve.

* Step 1

First, it's important to remember that you can do this using whatever vegetables you have on hand and deem acceptable for breakfast. Gather, rinse and chop your vegetables. Chop the bacon too.

* Step 2

Throw vegetables (except green onions, spinach, and garlic) and the bacon into your wok or skillet. Let cook until bacon is nearly done to your liking.

* Step 3

Toss in garlic and spinach. Cook for 1 minute or until spinach is starting to wilt.

* Step 4

Add cooked rice to skillet. And add the coconut aminos, red boat and chili garlic sauce. You can use home fermented or store bought. You can also replace cooked rice with cauliflower, the aminos with soy sauce, and the Red Boat with any brand fish sauce or oyster sauce.

* Step 5

Once done, transfer to plate so you can cook your egg. I cook my egg in a little egg skillet all by itself. You can do this how you like. I choose a duck egg because I have ducks. But you can use chicken, goose, quail, turkey... emu... Have fun it it. Cook until over easy, salt and pepper to taste and add to your fried rice.

Top with green onions and enjoy.

* Step 1

Cut bacon into small pieces and fry. Set aside.

* Step 2

Add sliced leek to bacon grease and sauté until soft. Add butter if needed.

* Step 3

Make well in the leeks for your egg. Add salt and pepper to taste. Crack and cover. Cook egg until done but yolk is soft.

* Step 4

Move to plate, top with bacon, and enjoy.
