masala paste

1/2 Tsp

cumin powder

1/2 cup

Cooking instructions

* Step 1

Boil baby potatoes with 1/3 Tsp salt till 40% done. Cook down, remove the skin and prick to enter masala while cooking.

Coat the cool down boiled baby potatoes with cornflour.

Heat oil and fry the coated potatoes on low to medium flame. Set aside.

To the remaining oil and cumin seeds and allow to splutter. Add chopped tomatoes, salt turmeric powder, coriander powder and cumin powder. Saute on low flame till aromatic and add the masala paste.

Saute on low flame till aromatic and oil separates from masa.

Now add the potatoes, mix well and cook for 2-3 minutes.

Add 1/2 cup warm water and bring to boil. Garnish with Cashews and raisins and the curry is ready to serve.

I have taken here my kitchen garden fresh spinach as the main ingredient with oatmeal and flax seed (powder) to increase the health benefits from all three ingredients. Oats, as everyone knows, has lots of fiber, rich in thiamine (vitamin B), magnesium and phosphorus. Flax seeds (alsi seed) are loaded with omega-3-fatty acid and also has high quality protein content. Usually children do not like to eat leafy vegetables, but they will certainly be interested when the preparation with these valuable ingredients is in the form of cutlets, chops, and pizzas.

* Step 1

Grind oats, cumin and ground nuts in a mixing jar. Mix all the ingredients except sesame seeds and oil. If, facing any difficulty to make the dough, opt for rice flour for binding.

* Step 1

Take a pan/ kadhai on low medium flame add oil, cumin seeds, asafoetida. Let cumin crackled add finely chopped onions. Saute it till transparent.

Now add green chilli ginger garlic paste, saute it for a min. Add chopped tomatoes. Mix it will and let Tomatoes get cooked properly.

Smash all Tomatoes with a smasher so the gravy becomes smoother. Now add boiled whole potatoes in the gravy. Mix it. Close the lid so all masala incorporates with Potatoes. Once the potatoes filled with masala and released oil it's ready to serve garnish with coriander leaves or red chilli. Enjoy with Parathas.

* Step 4

Pour the lemon juice and mix well.

* Step 5

Keep the spinach leaves in ice cool water

* Step 6

Lastly add the spinach leaves in baby potatoes mixtures and mix well.

* Step 7

Serve immediately.
