Another age old heartthrob from Bengal...!!! Most delectable & irresistibly tempting at any point of time to not only the Bongs but among all others too... Those who’ve ALL tasted this one before even, at least once in their very lifetime !

Ingredient

2 Cups

Sugar

9 Cups

Water

3-4 drops

orange essence

Cooking instructions

* Step 1

First up: Boil the milk & then turning off the flame, allow it to cool down for about a minute or two

* Step 2

Then, with the freshly squeezed orange juice- curdle the milk to get the chhena for the preparation of this‘Komolabhog’

* Step 3

Mix in the Orange juice to the milk, gradually & stir gently with the other hand- in order to get the milk curdle in a good way (big- medium chunks of Chhena)

Strain the whey into a big pan- wash the Chhena, squeeze out the excess water but not completely (it need be moist enough to yield a smooth & crack-free dough for the sweets)

Now, take the Chhena, maida into a big plate/dish/parat- Add into it, the kesari/orange food colour & knead it well with the help of the palm, to form a smooth dough & dough-lets

Once done- In a big saucepan: Add in the measured sugar & water, add in it the green cardamom powder & 2-3 drops of orange essence & 2 drops of orange food colour too & bring it to a boil

At this point: Keeping the flame at its high, add in the dough-lets- Cover the lid of the pan- Keep the flame in the high & allow it to cook for the next 8-10 mins time (without opening the lid at all)

Once the time period is over- open the lilid of the pan, gently flip the Sweets & without the lid- allow it to cook for another 3-4 mins time over the high flame

Once done with this step: Now, put the flame to the low & put the lid back & allow it to cook for another 16-18 mins time- Flipping occasionally, in between 2/3 times & complete with the entire cooking process- patiently!

Once done: Turn off the flame & shake the pan gently & very cautiously once & place it back onto the oven with its lid on & allow it to cool down for sometime until lukewarm to transfer the sweets separately into a different bowl & then pour in the sugar syrup in it

The KOMOLABHOG is ready now...it need be immersed into the sugar syrup alike, for the next 6-8 hrs time (in the RT) or overnight before chilling it in the refrigerator and serve it chilled to the guests or enjoy yourself with your own family & the loved ones

1/2 cup

castor sugar

1 tbsp

orange pulp

Cooking instructions

* Step 1

Sieve together maida,soda bicarb,baking powder and cinnamon powder.Keep aside.

* Step 2

Blend together,butter and sugar.Add orange juice.Add eggs one by one,blend.Add grated carrot and orange pulp also.

Add maida mix portion by portion to the butter -egg mixture,fold.Add whole maida and fold.Add orange rinds,fold.

Transfer to a greased mould,I've used a silicon mould so there is no need to grease.

Bake in a preheated oven for 25 minutes at 180°c.

Take out the cake and cool on a cooling rake.Serve warm.

Ingredient

1 cup

sugar

2 tbsp

orange pulp

Cooking instructions

* Step 1

Heat a pan and boil orange juice on medium flame. Add orange rinds. Boil till reduced to half.

Add sugar, lemon juice and food colour. Cook further till the juice is thick and looks shiny.

* Step 3

Put off flame and let marmalade be cool. Store in an airtight container and can be consumed up to 1 month.

Cooking instructions

* Step 1

Blend oiland sugar together.

Add eggs one by one and blend till creamy.Add lemon zest.

Sieve together all pupose flour,baking powder and soda bicarb.

* Step 4

Add portion by portion to the sugar-egg-oil mixture.Fold.Add orange juice also.

Coat dry fruits and chopped orange rinds in 1tsp of all purpose flour.Add to the batter.FoldTransfer to a greased baking tin.

Preheat an oven at 180°c for 10 minutes.

Bake for 35 to 40 minutes(baking time varies from over to oven.My cake done in 37 minutes,so check accordingly)

* Step 8

After 30 minutes,decrease the tempreture of oven to 170°c and further bake.

* Step 9

Check the cake by inserting a toothpick,if it comeout clean,the cake is baked properly,if does not extend the baking for few minutes.

Cool and take out the cake from cake tin,slice and serve.

baking soda

1 pinch

salt

1 tbsp

lemon rinds

3/4 cup

sugar

1/2 cup

margarine

1/4 cup

milk

Cooking instructions

* Step 1

Pre-heat oven at 180°C and grease and dust the baking pan

Mix all the dry ingredients, including the sugar, in one bowl. Add in the margarine and rub in to a breadcrumb texture

In a separate bowl, beat the eggs and add them int the flour mixture

Add iin the yorguta and mix to a smooth batter

Add in the rinds and whisk till well combined.
