1 . Green Gram Curry

1/2 teaspoon

Mustard seeds

* Step 1

To begin making the green gram curry / cherupayar curry, soak the green gram in water for overnight.

* Step 2

Pressure cook the green gram with water for about 2 whistle. Wait for the pressure to release.

Heat a kadai with oil, add mustard seeds and allow it to splutter. Then add in curry leaves, pearl onions, dried red chillies. Saute until pearl onion is soften. Once done add in green gram and mix well.

Meanwhile grind the coconut, green chillies, cumin seeds, turmeric powder, garlic and grind it into smooth paste by adding little water.

* Step 5

Add this ground paste to into the green gram, adjust your salt levels, add water if required and boil for another 10 minutes or till required consistency.

Serve hot.

2 . Jeera Rice

1 teaspoon

Jeera / Cumin

1 tablespoon

Ghee

2 cup

Water

to taste

Salt

Cooking instructions

* Step 1

Wash and soak the rice for 20 minutes. Drain them and keep it aside.

* Step 2

Heat ghee in a pan. Add in Cumin / Jeera seeds, cloves, cinnamon stick and bay leaf. Saute it for few seconds.

* Step 3

Add onion, green chillies, curry leaves and saute well.

* Step 4

Now add in rice and fry for a minute

* Step 5

Add 2 cup of water or till water level is just above the rice. Add salt to taste.

* Step 6

Cover and cook for approximately 5 - 6 minutes, till all the water has evaporated and the rice is cooked through.

* Step 7

When jeera rice is done, gently fluff the rice with a fork.

* Step 8

Serve jeera rice with any gravy, curry or dal.

* Step 1

Soak tamarind in warm water and extract the juice. Wash,cut the brinjals into medium sized pieces and soak it in water.

* Step 2

In a pan add little oil saute the ingredients until golden brown and grind everything into a fine powder.

* Step 3

In a pan add oil when it is hot add Mustard seeds, when it splutter add chana dal, red chillies, hing and curry leaves.

* Step 4

Add the brinjals, tamarind pulp, turmeric powder and salt. Mix well, boil for a few minutes till the raw smell goes off.

* Step 5

Add the grinded powder, mix well and boil for a few minutes till it becomes thick consistency. Switch off the flame and goes well with hot rice, Pongal and Idlis.

* Step 1

Pressure cook Chayote for one whistle

* Step 2

Soak Chana dal in warm water.

* Step 3

Grind Cumin seeds, green chillies, Coconut and chana dal into a fine paste.

* Step 4

In a pan add oil when it is hot add Mustard seeds, when it splutter add the Chayote,grinded paste, buttermilk, salt, hing,curry leaves and boil for a few minutes. Switch off the flame.

5 . Cluster beans Rice

Rice

1.5 cups

Cluster beans

Salt

1 tsp

Hing

1 tbsp

Chana dal

as required

Curry leaves a few

Sesame oil

1 tbsp

Cooking instructions

* Step 1

Pressure cook rice and spread it on a plate.

* Step 2

Wash and cut the beans into long pieces.

* Step 3

Dry roast the ingredients until golden brown and keep it aside. In the same pan add little oil saute the tamarind for a few minutes and switch off the flame.

* Step 4

When it is cooled down grind everything into a fine powder.

* Step 5

In a pan add oil when it is hot add Mustard seeds when it splutter add chana dal, hing and curry leaves.

* Step 6

Add the cluster beans, turmeric powder and salt. Saute for a few minutes until it is cooked.

* Step 7

Add the cooked rice, mix well without breaking it.

* Step 8

Add the grinded powder, mix well and saute for 5 minutes.

* Step 9

Switch off the flame. Finally add a tbsp of ghee to give extra taste.
