Japanese Yellowtail Simmered with Daikon Radish

A classic Japanese yellowtail dish out that brings out the wonderfulness in Japanese cuisine!

Ingredient

Cooking instructions

* Step 1

1. Boil daikon radish pieces for 20~30 minutes till they're soft enough to be pierced through with a bamboo skewer. (Alternatively, microwave for 10~15 minutes.)

* Step 2

2. To remove fishy odours, sprinkle Japanese yellowtail fillets with salt, stand for 5 minutes, and place briefly in boiling water till semi-cooked.

* Step 3

3. Combine all ingredients in A and bring to a boil. (Alternatively, use store-bought mentsuyu base thinned down slightly with water.)

* Step 4

4. Place the par-cooked daikon radish and fish fillets in the cooking liquid and simmer for 10 minutes. Keep an eye out so they don't burn.

5. For a finishing touch, pour a little extra mirin at the end to give the food a glossy glow.

6. Garnish with blanched spinach and finely shredded ginger to serve.

Katsudon is one of Donburi foods, which Tonkatsu and onions simmered with soy-based noodle soup and beaten egg served over freshly cooked rice. The most often used deep fried food for Katsudon is Tonkatsu. However, there are also other kinds of deep-fried foods such as beef cutlet, chicken cutlet, Menchi-Katsu, and shrimp cutlet. Also, there're some different style foods called Katsudon. The standard Katsudon is introduced in this recipe. #donburi #lunch #dinner

* Step 1

Cut the onion into 5 mm wedges. Slice the Tonkatsu about 1.5 cm width.

* Step 2

Beat the eggs in a bowl.

* Step 3

Mix the condiments (A) in a frying pan. Heat the frying pan until it comes to a boil.

Add the cut onion to the frying pan. Simmer them over medium heat for a few minutes.

* Step 5

Place the Tonkatsu evenly in the frying pan. Then pour the beaten eggs evenly on the surface and simmer for about 2~3 minutes. Then put a lid over the frying pan and turn the heat off. Leave the frying pan for a few minutes.

Serve the freshly cooked rice in a bowl and serve the meal over the rice.

Cooking instructions

* Step 1

In a large bowl, beat the eggs and add some sugar. Then add Mirin and honey. Whisk well until the mixture becomes fluffy.

Dissolve the baking soda in a water (A). Sift the flour into the bowl and mix all together gently. Keep in a fridge to rest for about 30 minutes.

Add water (B) and mix them.

* Step 4

Grease oil in a frying pan and heat it. Then turn down the heat to low.

* Step 5

With a ladle, pour 3 tbsp of the batter from about 10 cm above the pan to create 8 cm diameter pancakes.

When you see the surface of the batter starts to bubble, flip over and cook the other side for 20 ~ 30 seconds.

* Step 7

When the pancakes are cooked, cover with a plastic film or a wet cloth immediately to prevent drying. Continue making pancakes. You can cook 16~20 pancakes.

Put some anko on a pancake. If the texture of anko is too thick, knead it by adding a small amount of water.

Take another pancake and make a sandwich and wrap with a plastic film. Press their rim gently.

Cooking instructions

* Step 1

To prepare the dough add the solid ingredients, mix them well and add the water. Max dough into a single ball; but don't knead for a long time. Cover and let sit for hours.

* Step 2

Melt the butter in a skillet over medium heat. Add the sliced mushrooms in a single layer. Turn to the other side when brown. Add salt after they get cold in a side dish.

* Step 3

Add all (C) ingredients in a blender. Check the desired consistency and taste. Set aside.

* Step 4

Take half the dough after it has risen and roll on a floured surface with a rolling pin into a thin layer to cover up the whole area of your pizza stone.

* Step 5

Now we assemble everything. First spray the pizza stone with the oil. Spread the dough. Add the tomato sauce then the mozzarella cheese and finally the mushrooms.

* Step 6

Stick in a preheated oven at 180 degrees C for 20 minutes or until the dough moves easily on the stone and the surface of the pizza is golden brown.

* Step 7

Slice the pizza and serve after 10 minutes rest.
