* Step 1

Take maida in a bowl,add salt and oil.Mix till crumbled.Add water little by little.Knead a stiff dough.Grease with oil.Cover and leave for 30 minutes.

Heat a pan,add oil.Add ginger and garlic.Saute for 1 minute.Add carrot and cabbage.Saute for 2 minutes on high flame.Add salt and pepper also.

Add spring onion,mix and keep aside.

* Step 4

Make small balls of the dough,roll on a rolling board.Put 2 spoon stuffing on the puri.

Fold the puri as shown in the picture.Make all like this.there will beabout 18-20momos.

Heat a steamer,put momos on the greased steamer and steam them for 10 minutes on medium flame.

Steam momos in 2-3batches depending upon the size of steamer.

Take out momos,cool for 5 minutes.Serve with momos chutney.

red chilli powder

turmeric powder

coriander powder

garam masala

to taste

Cooking instructions

* Step 1

Wet grind coriander leaves,spring onion leaves and green chillies to a smooth paste.Keep aside.

* Step 2

Heat oil in a pan,add all whole garam masala mentioned above and dried red chillies,fry thinly sliced onion to golden brown.

* Step 3

Add mutton,cook on high flame till water of mutton dries.

* Step 4

Add turmeric powder,coriander powder,chilli powder,ginger -garlic paste and salt.Mix well.Add a little water and cook on medium flame for 2 minutes.

* Step 5

Add coriander-chilli paste,stir.cook on low flame till oil separates.Add 2 cups water.Cover the pan and cook on low -medium heat for 30 minutes or till mutton is tender.

* Step 6

Add garam masala powder,stir and adjust consistency of gravy as you desire.

* Step 7

Put off flame and leave for 5 minutes. Sabz gosht is ready to serve.Serve with rice /rotis.

* Step 1

Marinate chicken with all the marinated ingredients

Fry the marinated chicken until it gets golden brown. Drain with a slotted spoon and place on absorbent paper. Keep aside.

Now add oil, add the chopped garlic and saute on high flame for about 30 secs. Add the chopped ginger and green chilies with buttons red chilies and saute for a few more secs.

Add the brown sugar, soya sauce, tomato ketchup, chilli garlic sauce, chilli sauce and vinegar. Combine well and cook for 2 minutes.

Add 1/4 cup chicken stock or water and cook for a minute n add sesame oil.

Add the cooked chicken now and cook for 5 minutes at least.

* Step 1

In a bowl,add 250 gms all purpose flour.,salt,oil,and mix it well.add 120 ml water and knead it into a smooth dough.rest it for 30 min.

In another bowl,add 6gms dry red chillies,and 150 ml water,and soak for 25 min then in ablender,blend the soak red chillies along with tomato,and 1tsp vinegar,and blend it to a smooth paste.

Heat 30 ml oil ina pan,add 2 tablespoon garlic,2tablespoon ginger,and stir for a min. Then add 70 gms of onions and fry till it transculent.

Now add 50gms of carrots,and 50 gms of cabbage,and mix it well.add salt,cook for 5 to 7 min in a medium heat.add 1/4tsp black pepper,1tsp soya sauce,1tsp vinegar and mix it well.

Take a ball from dough and flatten them with a rolling pin.and make a small shape round.cut out a circle from it.add the prepared stuff on it and shape them like a momo.

Heat the sufficient oil in a karhai,and deep fry the momo,until golden brown and crispy.take out from the karhai to add it in the gravy.

Heat 1tablespoon of oil in a pan,add 65gms onion,a bunch of spring onion leaves,and mix it well.add salt as per taste. Cook for 5 to 7 min.till it's turn brown in colour.add 1tablespoon chaat masala powder and mix it well.then add the prepared red chillies,tomato chutney,and fresh cream and mix it well.cook for 3 to 5 min in a medium heat.now add the fried momo in the cooking gravy,and cook for 5 min till it's well mixed. And switch off the flame.
