Cooking instructions

* Step 1

Soak dal in water overnight, wash it, strain it.

Take a pressure cooker, add dal, hing, salt, haldi powder & oil, in goes 6 cup water, place the lid. Give 8 whistles on high flame, lower the flame, cook it for 15 minutes.

Turn off the flame, allow it to depressurise naturally, open the lid after 5 minutes. Whisk dal nicely, take out in a bowl, keep aside.

Peel turai, cut into small pcs, wash it, keep aside. Take a pressure cooker, add 1 tsp oil, heat it, add turai pcs, salt & haldi, stir fry it for a minute, add very lil water, place the lid, give 5 whistles on high flame, lower the flame, cook it for 5 minutes. Take out in a bowl, keep aside.

Now take a wok, add ghee, heat it. Moderate the flame, add hing & zeera, let it splutter.

In goes onion, stir fry it until pink.

Add in ginger garlic, stir fry it until light brown.

Now add red chilli powder & dhania powder, mix it well. In goes lil water & salt, mix it well. Stir fry it until oil has oozed out.

Add in tomato puree, mix it well, cook it covered on low flame until oil has surfaced.

Mix dahi & coconut milk, add in the masala, increase the flame, stir fry it until oil has oozed out.

In goes garam masala powder & kasoori methi, mix it well.

Finally add cooked dal & turai, mix it thoroughly, can add lil water if required. Give a boil.

Lower the flame, cook it covered until a lil thick. Turn off the flame.

* Step 1

Peel eggs, make slits, fry them in 1 tbsp oil until light brown, take out in a bowl, keep aside.

Now take a pressure cooker, add rest of the oil, heat it. In goes tejpatta, bari elaichi, laung, kali mirch & dalchini, saute it for 10 sec.

Add in onion, stir fry it until light brown.

In goes ginger garlic paste, saute it until oil has oozed out, add lil water to avoid burning.

Place the lid, give 4 whistles on high flame, turn off the flame, allow it to depressurise naturally. Open the lid after 10 minutes.

* Step 1

Cut paneer into rectangular shape, add in a mixing bowl, also add salt & kashmiri red chilli powder, mix it well, keep aside.

Take a wok, add oil, heat it. In goes dalchini, laung & bari elaichi, saute it for 10 sec.

Now add onion, stir fry it until light brown, meanwhile add ghee.

Side by side take a pan, add 3 tbsp oil, heat it, fry paneer pcs till light brown, keep aside.

In goes salt,Kashmiri red chilli powder & dhania powder, mix it well, cook it for a minute.

Now add 1 cup hot water, mix it well, in goes kasoori methi, mix it well. Give a boil.

Add in fried paneer, stir it, cook it covered on low flame for 5 minutes.

* Step 1

Take a mixing bowl, add ata, salt, red chili powder & gram masala powder. Now add dahi, mix it well. Add water slowly, whisk it nicely till semi thick smooth pouring consistency.
