dahi

1 tsp

salt

1/2 tsp

ginger paste

1/2 tsp

haldi powder

Cooking instructions

* Step 1

Take a bowl, add chicken pcs & all the given ingredients of marination, mix it well. Keep it in the fridge for 2 hrs. Strain rice, keep aside.

Take a pan, add 2 tbsp oil (adjustable), heat it. Shallow fry chicken pcs on moderate flame until light brown, keep aside.

* Step 3

Take a deep bottom pan, add rest of the oil & butter, heat it. Add tejpatta & laung, saute it for 30 sec.

* Step 4

Now add onion, stir fry it until translucent. In goes ginger garlic, saute it until rawness is released.

* Step 5

Add strained rice, mix it well. Add salt, kashmiri red chilli powder & garam masala powder, mix it well. Stir fry it for 5 minutes.

In goes 3 cup water, mix it well. Give a boil, add fried chicken pcs, do not mix it.

Lower the flame, cover it with the lid, cook it until done. Do not stir in between. Turn off the flame, open the lid after 10 minutes.

Take out in a serving bowl, garnish it with brown onion, slitted green chilli & dhania leaves...

Cooking instructions

* Step 1

Take a deep bottom pan, add good amount of water, 1 tsp salt & oil, boil it. Strain soaked rice, add in the boiling water, cook it up to 90%. Turn off the flame. Strain it, keep it in a bowl.

For orange paste.....add all the ingredients in a mixer jar, in goes lil water, grind it to a fine paste, keep aside. Make the green paste in the same manner. Only add 2 ice cubes in place of water to retain green colour.

For orange rice....Take a wok or pan, add 1 tbsp oil, heat it. Add pinch of Rai, let it splutter. In goes 2 tbsp orange paste & lil salt, mix it well. Do not overcook it.

Now add 1 bowl cooked rice, mix it well. Stir fry it for 30 sec. Turn off the flame.

Take out in a dish or bowl, keep aside.

For green rice..... Take a pan or wok, add 1 tbsp oil, heat it. In goes 1/4 tsp zeera, let it splutter. Add 2 tbsp green paste & lil salt, mix it well.

Now add 1 bowl cooked rice, mix it well. Turn off the flame. Take out in a dish or bowl, keep aside.

For white rice....Take a wok or pan, add 1 tbsp oil, heat it. Add rest of the zeera, let it splutter. In goes ginger garlic, saute it until rawness is released.

Now add 1 bowl cooked rice, sprinkle lil salt, mix it well. Cook it for 30 sec. Turn off the flame, take out in a bowl or dish.

Take a white plate, arrange the rice in Tiranga manner, make Ashok Chakra with laung & sabit kali mirch...

* Step 1

Take a deep bottom pan, add good amount of water, 1 tsp salt & 1 tsp oil, boil it. Strain rice, add in the boiling water, cook it until 90% cooked. Turn off the flame.

* Step 2

Strain cooked rice, immediately put under running water to stop cooking. Take out in a bowl, keep aside.

Take a wok or pan, add oil, heat it. in goes green chilli, ginger, garlic, saute it for 30 sec.

Add onion now, stir fry it for a minute.

Now add all the veggies, also add salt accordingly, mix well. Stir fry it for a minute.
