Cooking instructions

* Step 1

Strain millet & dal separately, keep aside.

* Step 2

Take a pressure cooker, add oil or ghee, heat it. Moderate the flame, add hing & zeera, let it splutter.

* Step 3

Increase the flame, add onion, stir fry it for a minute. In goes green chilli, stir fry it until light brown.

Now add ginger garlic, saute it until rawness is released.

Add in matar & paneer, stir fry it for a minute.

Now add millet & dal, mix it well. Stir fry it for a minute.

Add in salt & haldi powder, mix it well, stir-fry it for a minute. In goes gram masala powder, stir-fry it for a minute.

Now add 6 cup water (adjustable), mix it well. Boil it until a lil thick.

Place the lid, give 3 whistles on high flame. Lower the flame, cook it for 5 minutes. Turn off the flame, allow it to depressurise naturally. Open the lid after 10 minutes.

Take out in a serving bowl, add lil ghee, garnish it with a dhania sprig.

Strain rice, keep aside. Take a pan, add ghee or oil, heat it.

Moderate the flame, add whole garam masala, saute it for 30 sec. In goes zeera, let it splutter.

Add onion now, increased the flame, stir fry it until light brown.

Ingredient

1/2 bowl

arhar dal,

Pinch

hing,

1/4 tsp

Jeera,

Cooking instructions

* Step 1

Firstly take a mixing bowl, add rice & dal, mix it.

Wash it & soak it in water for 30 minutes, keep aside.

Take a pressure cooker, add oil or ghee, heat it. (I have used oil).

* Step 4

Add hing & zeera, let it splutter.

Now add garlic grated, saute it till light brown.

Add onion & dry red chilli, stir fry it until golden brown.

Strain the khichdi, add in the masala, stir fry it for 5 minutes.

Moderate the flame,add ginger garlic paste, stir it till rawness is released.

Add haldi & red chilli powder, increase the flame,,stir fry it for 7 minutes.

Add garam masala powder now, stir fry it till grains aur separated.

Now add 2 1/2 cup water. Add salt & sugar. This is not a mushy khichdi.

Place the lid, give 4 whistles at high flame, lower the flame, cook it for 5 minutes.

Switch off the flame, allow it to depressurize. Open the lid after 5 minutes.

Take out in a serving dish, garnish it with onion browns.

Have it with desi ghee, papad, salad, dahi & achaar.

Make onion browns by frying thinly sliced onion in ghee (quantity is variable).

* Step 1

Mix dal & rice, wash it, soak it in water for 1 hour. Strain it, keep aside.

* Step 2

Take a pressure cooker, add oil or ghee, heat it. Add hing.

* Step 3

Now add onion, stir fry it until light brown. Add ginger garlic grated, sauté it for a while.

* Step 4

Add haldi, dhania & red chilli powder, add lil water, stir fry it till oil has oozed out.

* Step 5

Add salt, mix well. Add all the veggies, stir fry it for a while.

* Step 6

Now add khichdi, mix it well. Stir fry it for a while.

* Step 7

Add sugar now, give a stir. Add water accordingly so as to keep the grains separated.

* Step 8

Place the lid now, give 2 whistles at high flame. Lower the flame now, cook it for 5 minutes.

* Step 9

Switch off the flame, allow it to depressurise.

* Step 10

Take out in a serving bowl. Keep aside.

* Step 11

Now take a pan, add ghee, heat it. Add zeera, let it splutter.

* Step 12

Now add all the given ingredients one by one, sauté it for a while.

* Step 13

Pour tadka over the cooked khichdi, mix it while serving.

* Step 14

Have it with desi ghee, salad, achar, papad, chutney or raita.

A very common dish ... a vegetarian replacement for egg bhurji..

Ingredient

1 tbsp

curd,

to taste,

salt

Cooking instructions

* Step 1

Take a wok, add 1 tbsp oil, heat it, fry capsicum till light brown. Keep aside.

* Step 2

Now add more oil in the same wok, heat it, add whole garam masala, sauté it for a sec.

* Step 3

Add ginger garlic paste, add lil water also, sauté it for a while.

* Step 4

Now add onion paste, also add lil water, stir fry it for a while.

* Step 5

Lower the flame now, cover it with the lid, cook it until golden brown.

* Step 6

Add tomato purée & salt, stir fry it for a while.

* Step 7

Cover it again, cook it at low flame till oil separates.

* Step 8

Open the lid now, add haldi, dhania & red chilli powder, add lil water also, increase the flame, stir fry it until oil has oozed out.

* Step 9

Now add garam masala powder, curd & fresh cream, mix well, cover it with the lid, lower the flame, cook it until oil separates.

* Step 10

Add paneer & capsicum, stir fry it for a while at high flame.

* Step 11

Add boiled water accordingly so as to keep the dish dry. Cook it at high flame till first boil.

* Step 12

Lower the flame now, cover it with the lid, cook it till dry.

* Step 13

Switch off the flame now, open the lid after a while.

* Step 14

Take out in a serving bowl, garnish it with chopped dhania patta.

* Step 15

Serve it with Roti or Paratha..
