Cooking instructions

* Step 1

Take a wok, add oil, heat it. Add whole garam masala, saute it for 30 sec.

In goes onion, stir fry it until translucent. Add chicken pcs, stir fry it for a minute.

Now add ginger garlic paste, stir fry it until chicken turns lil brown.

Add in red chilli powder, haldi powder & salt, mix it well. Sprinkle lil water to avoid burning. Stir fry it until oil has oozed out.

Meanwhile take a mixer jar, add all the given ingredients of buttermilk one by one, add half cup water, blend it thoroughly, keep aside.

Now add buttermilk in the chicken, mix it well. Add 1 cup water, give a boil.

Cook it for 5 minutes, lower the flame, cover it with the lid, cook it until gravy turns saucy.

Turn off the flame, open the lid after 5 minutes. Take out in a serving bowl, garnish it with chopped dhania patta...

Cooking instructions

* Step 1

Firstly take a mixing bowl, add chicken pcs & all the given ingredients of marination, mix it well. Keep it in the fridge for 2 hrs.

Take a wok, add oil, heat it. In goes tejpatta & dalchini, saute it for 30 sec.

Now add onion, stir fry it until light brown.

Add grated ginger & garlic, saute it until rawness is released. Add very lil water to avoid burning. In goes salt now.

Meanwhile soak methi leaves in water with lil salt for 1/2 hr. Strain it, chop it roughly. Add in the masala. Mix it well.

In goes marinated chicken, stir fry it for a minute.

Lower the flame, cover it with the lid, cook it until chicken is almost cooked. Open the lid increase the flame, add garam masala powder & ghee, stir it for a minute.

Add 1 cup boiled water, mix it well. Cook it covered on low flame, until gravy becomes saucy. Turn off the flame, open the lid after 5 minutes.

Wash kaddu, strain it, keep aside.

Take a wok, add oil, heat it. In goes kalonji seeds, let it splutter.

Now add 1 cup boiled water, mix it well. Give a boil.

Cook it covered on low flame until gravy turns as per your choice (saucy or a lil thick).

For Tadka..... Take a tadka pan, add ghee, heat it.

* Step 1

Take a wok, add oil, heat it. Add green chilli & onion, stir fry it until light brown.

* Step 2

In goes ginger garlic paste, saute it until rawness is released. Add lil water to avoid burning.

* Step 3

Now add haldi, dhania & red chilli powder, and mix it well. Add lil water, and mix it well. In goes besan, cook it until light oil has oozed out.

* Step 4

Add in tomato & salt, mix well. Lower the flame, cover it with the lid, cook it until tomato becomes mushy.

* Step 5

Open the lid, increase the flame, add garam masala powder, Kashmiri red chilli powder & kasuri methi, and mix well.

* Step 6

In goes paneer, stir fry it for a minute on high flame. Add 1 cup boiled water, mix it well. Give a boil.

* Step 7

Cover it again, cook it on low flame until desired consistency. Turn off the flame, open the lid after 10 minutes.

* Step 8

Take out in a serving bowl, garnish it with a dhania leaf 🌿.

* Step 9

Can be served along with Roti or Paratha...

Cooking instructions

* Step 1

Take a mixing bowl, add buckwheat ata & whole wheat ata. Add in salt, ajwain, red chilli powder & garam masala powder, mix well. Now add onion & green chilli, mix it well.

* Step 2

Add water slowly slowly, knead a soft dough, rest it for 15 minutes. Now brush oil, knead it again, keep aside.

* Step 3

Take small portions of the dough, make balls. Roll them, make small poori.

* Step 4

Brush oil onto it, seal the edges. Roll it again, make a round Paratha. Make all the parathas in the same manner.

* Step 5

Take an iron tawa, heat it. Brush some oil, moderate the flame.

* Step 6

Place the Paratha over the tawa, cook it for 2 minutes. Flip it, again cook it for 2 minutes.

* Step 7

Brush ghee or oil on the upper side of the Paratha, flip it, brush oil or ghee on the other side too. Cook it until both side become light brown.

* Step 8

Take out on an absorbent paper, plate it in a serving dish. Have it with curd, chutney or Aloo sabzi.
