* Step 1

Remove the seeds of parwal pcs, wash all the veggies separately, keep aside.

Take a wok or pan, add 1 tbsp oil, heat it. Add parwal pcs, stir fry it until light brown. Take out in a bowl, keep aside.

Now stir fry onion & bell pepper in the same wok or pan, no need to add oil for 30 sec. Take out in a dish, keep aside.

Now add rest of the oil in the same wok or pan, heat it. In goes kalonji seeds, let it splutter.

Add onion now, stir fry it until light brown. In goes green chilli, garlic & ginger, stir fry it until rawness is released.

Add tomato & salt, mix it well. Cook it for a minute, tomato should not get mushy.

In goes haldi powder, dhania powder & red chilli powder, mix it well. Sprinkle lil water to avoid burning. Cook it for a minute.

Add fried parwal, mix it well. Stir fry it for a minute.

Add lil water, mix it well. Cook it covered on low flame until almost cooked.

Open the lid, increase the flame, mix dahi & fresh cream, add in the masala, mix it well. Lower the flame, cover it with the lid, cook it until oil has oozed out.

Open the lid, add diced onion & bell pepper, mix it well. Increase the flame, stir fry it for a minute.

Cooking instructions

* Step 1

Wash lobia, add in a pressure cooker, add lil salt & 1 tsp oil. In goes 2 cup water. Place the lid, give 6 whistles on high flame. Lower the flame, cook it for 5 minutes. Turn off the flame, allow it to depressurise naturally. Take out in a bowl, keep aside.

Clean the pressure cooker, dry it, add oil, heat it. Moderate the flame, add zeera, let it splutter.

In goes onion, stir fry it until light brown.

Mix tomato puree with ginger garlic paste, add in the masala, mix it well. Add salt also. Stir it. Lower the flame, cover it with the lid, cook it until oil has oozed out.

Open the lid, add haldi powder, dhania powder & red chilli powder, mix it well. Add lil water stir fry it until oil has surfaced.

Open the lid, increase the flame, add garam masala powder & kasoori methi, stir it.

In goes fresh cream, mix it well. Cover it again, cook it on low flame until oil has oozed out.

Open the lid, increase the flame, add boiled lobia, mix it well. Add water if required.

Place the lid, give 2 whistles on high flame, lower the flame, cook it for 7 minutes.

Turn off the flame, allow it to depressurise naturally. Open the lid after 5 minutes. Take out in a serving bowl, garnish it with chopped dhania patta & slitted green chilli.

* Step 1

Peel eggs, make 3 gashes, keep aside.

Take a pan, add onion, kaju & green chilli, top up with water, boil it until onion changes colour. Turn off the flame, cool it down. Grind it to a fine paste, keep aside.

Take a wok now, add 2 tbsp oil, heat it. Add eggs.

Stir fry eggs until light brown, keep aside.

Add rest of the oil in the same wok, remove any charred traces of egg. Heat it. Add whole Garam Masala, saute it for 30 sec. Add zeera now, let it splutter.

* Step 1

Make gashes in the Drumsticks. Add in a mixing bowl. Now add all the ingredients of marination one by one, mix it well. Keep it in the fridge for at least 2 hours.

Take a pan, add 2 tbsp oil, heat it. Take out the leg pcs. Add in the hot oil, fry them until light brown. Keep aside.

Take another pan or throw the burnt residue, wash the same pan, add rest of the oil, heat it.
