* Step 1

Wash the potato slices, keep aside.

Take a wok, add oil, heat it. Add kalonji seeds, let it splutter.

Now add onion & green chilli, stir fry it for 2 minutes.

In goes aloo slices, stir fry it for a minute. Add salt & haldi powder, mix it well. Cook it for a minute.

Now add 1 cup water, mix it well. Give a boil.

Lower the flame, cover it with the lid, cook it until almost cooked.

Turn off the flame, open the lid after 5 minutes. Take out in a serving bowl, garnish it with lil dhania patta.. pair it with Namkeen Paratha..

Cooking instructions

* Step 1

Wash mooli pcs, add in pressure cooker, top up with water, place the lid, give 6 whistles on high flame. Lower the flame, cook it for 5 minutes. Turn off the flame, allow it to depressurise naturally. Open the lid, strain it, allow it to cool down. Gently squeeze it, add in a mixing bowl.

Now add besan, salt, haldi powder, red chilli powder, dhania powder & garam masala powder, mix it well. Add 1 tbsp oil, mix it again. Keep aside.

Take a wok, add oil, heat it. Add methi dana, let it splutter.

In goes ginger garlic, saute it until brown. Add onion & green chilli, stir fry it until light brown.

In goes marinated mooli, stir fry it for a minute. Cook it covered on low flame until half done.

Open the lid, add dhania patta, mix it well. Stir fry it until completely cooked.

Turn off the flame, cover it with the lid for a minute. Take out in a serving bowl, garnish it with a dhania leaf.

Wash the veggies, keep aside.

Take a wok, add oil, heat it. Add kalonji seeds, let it splutter.

In goes green chilli & onion, stir fry it until light brown.

Now add aloo, stir fry it for a minute. In goes Sem, stir fry it for 2 minutes.

Add ginger garlic, saute it until rawness is released. Add haldi powder & salt, mix it well.

Now add dhania powder & red chilli powder, stir fry it for a minute. Lower the flame, cover it with the lid, cook it until almost cooked.

Open the lid, increase the flame, stir fry it until dry.

* Step 1

Firstly soak kaju & makhana in boiling water for 1/2 hr. Grind it to a fine paste, keep aside.

Take a deep bottom pan, add 2 tbsp oil, heat it. Add carrot, beans & capsicum, stir fry it for 2 minutes, keep aside.

Now add gobhi in the same left over oil, stir fry it until light brown, keep aside.

* Step 4

Now add 3 tbsp oil in the same pan, heat it. In goes ginger garlic, saute it for a minute. Add green chilli now, stir it.

Now add onion, stir fry it until pink.

In goes aloo, stir fry it for a minute. Add salt now.mix it well. Cook it covered on low flame until aloo is half done.

Open the lid, add carrot, beans & capsicum, mix it well. Add dhania powder, haldi powder & red chilli powder, stir fry it for a minute.

Now add gobhi, broccoli & matar, stir fry it for a minute. Sprinkle ver lil water, cover it with the lid, cook it on low flame until gobhi is almost cooked.

Open the lid, add tomato now, mix it well. Cook it covered on low flame for 3 minutes.

Open the lid, add garam masala powder & kasoori methi, give a stir.

Now add fresh cream, kaju makhana paste, mix it well.

Add 1/2 cup water, stir it. Give a boil. Cover it with the lid, cook it on low flame until saucy.

Turn off the flame, open the lid after 10 minutes. Take out in a serving bowl, garnish it with dhania sprig.

* Step 1

Firstly soak methi leaves in water with 1/2 tsp salt for 30 minutes. Wash it, strain it, roughly chop it.

Take a mixing bowl, add methi leaves & onion. Now add green chilli, haldi powder, red chilli powder & garam masala powder. In goes salt, garlic & ginger.

Now add besan & dahi. Mix it well. Add lil water if required. Make a smooth batter. Keep aside.

Take a wok, add good amount of oil, heat it. Moderate the flame, drop small portions of the batter in the hot oil.

Deep fry them until light brown. Take out in a bowl. Cook it in batches.
