* Step 1

Wash the veggies, keep aside. Take a pressure cooker, add both veggies, top up with water. Place the lid, give 4 whistles on high flame. Lower the flame, cook it for 10 minutes. Turn off the flame. Allow it to depressurise naturally. Open the lid, take out in a bowl. Strain it, allow it to cool down. Squeeze it, mash it, keep aside.

Take a wok, add oil, heat it. Add onion, stir fry it until light brown. Meanwhile add green chilli.

In goes ginger garlic paste, saute it rawness is released. Add very lil water to avoid burning.

Now add haldi powder, dhania powder & red chilli powder, mix it well. Add lil water to avoid burning. In goes salt also. Cook it until oil has surfaced. Add garam masala powder, mix it well.

Now add squeezed veggies, mix it well, stir fry it until a lil dry. Add dhania patta now, mix it well.

Lightly dry roast the besan, add in the masala, mix it well.

Stir fry it for a minute, turn off the flame, take out in a bowl, allow it to cool down.

Now mash it again, take small portions of the batter, roll it, give the shape of kebab. Make all the kebabs in the same manner.

Take a pan, add 2 tbsp oil, heat it. Arrange the kebabs, shallow fry them until brown. Cook them flipping.

Take out in a serving dish, have it as a party snack.

Wash the veggies separately, keep aside.

Take a wok, add oil, heat it. Moderate the flame, add hing, zeera & kalonji seeds, let it splutter.

Add onion & green chilli, stir fry it until light brown. In goes ginger garlic, saute it until rawness is released.

Now add haldi, dhania & red chilli powder, mix well.

Lower the flame, cover it with the lid, cook it until veggies aur almost cooked, stir only once in between.

Open the lid, increase the flame, add tomato, stir it. Cook it covered on low flame, until tomato is half cooked.

Open the lid, increase the flame, stir fry it until a lil dry. Now add dhania patta, mix it nicely, cook it for a minute.

Turn off the flame, cover it with the lid for 5 minutes.

Take out in a serving bowl, garnish it with a dhania leaf.

* Step 1

Soak kala chana in water overnight. Boil it with lil salt & 1 cup water (adjustable) in pressure cooker. Place the lid, give 8 whistles & it is done.

* Step 2

Now take a wok, add 1 tbsp oil, heat it. Add pinch of hing & zeera, let it splutter. Add chana now, stir fry it for a minute. Add lil red chilli powder & garam masala powder, stir fry it until dry. Keep aside.

* Step 3

Take a mixing bowl, add all the veggies. Now add chana. Mix it well.

* Step 4

In goes both the salt & black pepper powder, give a mix. Add lemon juice, mix it thoroughly.

* Step 5

Now add dhania patta, give a gentle stir. Salad 🥗 is ready now.

* Step 1

Take a mixing bowl, add all the ingredients of Stuffing, mix well till smooth. Keep aside.

* Step 2

Take another bowl, fill it with water upto 3/4 level. Dip one slice at a time in the water, squeeze it nicely.
