* Step 1

Take a mixing bowl, add ata & besan. Now add all the given ingredients except oil, mix it well.

In goes oil, mix it nicely. Add water slowly slowly, knead a medium hard dough. Rest it covered for 10 minutes.

Open the lid, add 1 tbsp oil, knead it again. Keep aside.

Take small portions of the dough, make balls. Roll it, make a small, a lil thick kachori. Make all the kachoris in the same manner.

Take a wok, add good amount of oil, heat it. Moderate the flame, drop kachori one by one, deep fry it until crispy brown.

Make all the kachoris in the same manner. Take out in a serving plate, can be had with any curry.

powdered masala

1/2 tsp haldi powder,

Cooking instructions

* Step 1

Take a mixing bowl, add ata, salt & ajwain. Mix it well.

Now add mooli, green chilli, ginger & all the powdered masala. Mix it well.

Add water slowly slowly if required, knead a soft dough, rest it for 5 minutes.

In goes dhania patta & 1 tbsp oil, knead it again, keep aside.

Take small portions of the dough, make balls. Roll it, spread lil oil, seal the edges, make a ball.

Roll it, make a lil thick Paratha, keep aside.

Heat an iron tawa, spread some oil, place the Paratha. Cook it both side until light brown.

Brush oil on the upper side. Flip it, brush oil on the other side too.

Cook it both side until brown. Take out in a dish. Make all parathas in the same manner.

Firstly take a mixing bowl, add ata, salt & ajwain. Add water slowly slowly, knead a soft dough. Rest it for 10 minutes. In goes oil, knead it again, keep aside.

* Step 2

Take another mixing bowl, add aloo & all the other ingredients one by one, mix it thoroughly.

Take small portions of the dough, roll it, make balls. Flatten it, fill it with the stuffing, seal the edges, make balls.

Now roll it, make Paratha. Make all the parathas in the same manner.

Heat an iron tawa, brush some oil, place the Paratha on it.

For Scrambled Paneer.... Take a pan, add oil, heat it. Add onion & green chilli, stir fry it for a minute.

Add bell peppers & tomato, in goes salt also, stir fry it for a minute.

In goes ginger garlic paste, stir fry it until rawness is released.

Now haldi powder, dhania powder & red chilli powder, mix it well.

Add paneer now, mix it well, cook it for 2 minutes.

In goes garam masala powder, stir fry it for 2 minutes. Add dhania patta, mix it well. Stir fry it for a minute.

Turn off the flame, keep aside.

For Roti.... Take a mixing bowl, add both the ata & lil salt. Knead a soft dough by adding water slowly slowly. Brush 1 tsp oil, knead it again. Keep aside for 5 minutes.

Take small portions of the dough, roll it, make a med sized roti.

Heat an iron tawa, place the roti on it. Cook it both sides flipping until light brown.

Hold the half cooked roti with a pair of tongs, cook it directly on the flame until brown.

* Step 1

Take a wok, add ghee, heat it. Lower the flame, add ata, mix it well. Keep stirring, cook it until light brown.

Add sugar now, mix it well. Cook it for 2 minutes. In goes 1cup water (adjustable), mix it well.

Cook it until halwa leaves the wall of the wok, turn off the flame, keep aside.

Take another pan, add milk, heat it.
