Ingredient

Cooking instructions

* Step 1

Firstly take a mixer jar, add all the ingredients of sauce one by one, grind it to a fine paste, keep aside.

Wash chicken leg pcs, make gashes, add in a mixing bowl. In goes peri peri sauce,(quantity adjustable), mix it well. Keep it in the fridge for 2 hours.

Take a steel bowl, add smoked coal pc, pour lil oil over it. Keep this in the middle of the marinated chicken, cover it, keep aside for 1/2 hour to get smoky.

Line a baking tray with butter paper, place the leg pcs, add the rest of the marinade. Keep aside.

Preheat the oven on 200 degree centigrade, bake it for 25 minutes. Baking time depends on the power of oven.

You can cook it on grill pan or normal pan also.

* Step 7

Remove the bowl, place the leg pcs in the pan, cook it on medium high flame both side flipping in between. Brush some oil if needed. Cook it until both side brown.

Cooking instructions

* Step 1

Take a mixing bowl, add chicken drumsticks, add all the given ingredients of marination except dahi & oil. Mix well.

* Step 2

Now add dahi & oil,marinate it thoroughly. Keep it in the fridge for 2 hours.

If you want to make in lesser time, make gashes in the leg pcs & keep it in the fridge for 1/2 hrs.

* Step 4

Line the baking tray with butter, place the leg pcs. Add in the rest of the marinade.

Pre heat the oven at 180 degree, bake chicken for 45 minutes until brown.

* Step 6

Turn off the oven, rest it for 30 sec.

* Step 7

Take out in a serving dish. Can be served along with any dip or chutney.

Cooking instructions

* Step 1

Dry roast all the ingredients of spice mix except haldi & white pepper powder, cool it, grind it to a coarse powder. Now mix haldi & white pepper powder with it.

Take chicken leg pcs in a dish, make gashes, keep aside.

Mix all the ingredients of marination, rub it onto the leg pcs, keep it in the fridge for 1 hour.

Take a broad heavy bottom pan, add oil, heat it.

Add onion, stir fry it until light brown. Now add marinated chicken leg pcs, stir fry it for a minute.

Add tomato & salt, give a stir.

In goes lemon zest & 2 tbsp spice mix, also add rest of the marinade.

Stir fry it for a minute, sprinkle some water, lower the flame, cover it with the lid, cook it for 3 minutes.

Open the lid, increase the flame, add 3.5 cup water, boil it.

Cover it again, lower the flame, cook it until chicken is almost cooked. Take out the chicken pcs, keep aside.

* Step 11

Strain rice, add in the same gravy, also add salt, give a stir. Let it boil till water is almost absorbed. Lower the flame, cover it again,cook it for 2 minutes.

In the mean time, fry dry fruits in 2 tbsp ghee one by one till light brown, keep aside.

Now add rest of the ghee in the same pan, add chicken pcs, sprinkle spice mix, cook it on moderate flame, roast it nicely till golden brown.

Place the chicken pcs over the rice. Cover it again, dum it on low flame till done. Do not stir in between.

Turn off the flame, open the lid after 10 minutes.

Take out in a serving dish, garnish it with fried dry fruits.

Cooking instructions

* Step 1

Take a mixing bowl, add chicken & all the given ingredients of marination.

* Step 2

Mix it well, keep it in the fridge for 3-4 hours.

* Step 3

Take a wok, add oil, heat it. Add whole garam masala, sauté it for a while.

* Step 4

Now add onion, stir fry it till light brown. Add ginger garlic paste, also add lil water, sauté it for a while.

* Step 5

Add haldi, dhania & red chilli powder, mix it well. Add lil water to avoid burning. Stir fry it until oil has oozed out.

* Step 6

Add salt & fresh tomato purée, give a stir.

* Step 7

Lower the flame now, cover it with the lid, cook it till oil separates.

* Step 8

Open the lid, add garam masala powder, give a stir.

* Step 9

Increase the flame, add marinated chicken legs, stir it.

* Step 10

Lower the flame now, cover it with the lid, cook it till chicken is almost cooked.

* Step 11

Open the lid, add coconut milk & fresh cream, Increase the flame, stir fry it for a while.

* Step 12

Lower the flame now, sprinkle some water, cover it again.

* Step 13

Give a dum for 5-7 minutes.

* Step 14

Switch off the flame, open the lid after a while.

* Step 15

Take out in a serving bowl, garnish it with chopped dhania patta.

This can be had as a snack or in main course.

* Step 1

1/2 Cup vinegar,salt, yellow food colour mix and marinate chicken for half hour

* Step 2

Barbecue Masala,oil, yoghurt, chilli flakes, black pepper,salt mix all togetherand marinate the chicken

* Step 3

Don't wash first coating and after 2 hours cook in grill pan with slow flame after 30 45 minutes chicken is ready...
