Cooking instructions

* Step 1

Firstly dry roast all the ingredients of chola masala except the last four till roasted smell comes out.

* Step 2

Turn off the flame add the other 4 ingredients, mix it well. Grind it to a fine powder, keep aside.

* Step 3

Take a pressure cooker, wash the chole, add in the cooker.

* Step 4

Now add 1 tea bag, 1 bari elaichi, 5 laung, 1/2 tsp kali mirch sabit, 1 dalchini & 4 choti elaichi in a pc of cloth, make a potli.

* Step 5

Add this in the cooker, also add 4 cup water & 1 tsp salt. You can add 1/2 tsp baking soda as per your wish.

* Step 6

Place the lid, give 8 whistles on high flame. Lower the flame, cook it for 10 minutes.

* Step 7

Turn off the flame, allow it to depressurise naturally.

* Step 8

Take out in a bowl, keep aside. Do not discard the water in chole.

* Step 9

Now take an iron wok, add oil, heat it.

* Step 10

Add hing, stir it. Now add ginger garlic grated, saute it until rawness is released.

* Step 11

In goes onion & green chilli, saute it until light brown.

* Step 12

Add in haldi, red chilli powder & Kashmiri red chilli powder, mix it well.

* Step 13

Mix amchur powder with chola masala, add in the masala, stir it nicely. Add lil water to avoid burning. Stir fry it until oil has oozed out.

* Step 14

Now add tomato puree & salt, mix it well. Lower the flame, cover it with the lid, cook it until oil has surfaced.

* Step 15

Open the lid, add black salt & tamarind, mix it well. Add in boiled chole along with water, mix it well.

* Step 16

Cook it on high flame till dry. Turn off the flame, cover it for 5 minutes.

* Step 17

Take out in a serving bowl, garnish it with chopped dhania patta.

* Step 18

Can be had along with Poori, Paratha or Kulcha.

Take a tadka pan, add ghee, heat it. Add red chilli flakes, pour it immediately over the cooked chola.

* Step 1

Firstly wash rice, soak in water for 1 hour,strain it, keep aside.

Take a mixing bowl, add chicken & all the given ingredients of marination, mix it well. Keep it in the fridge for 2 hours.

Now take a mixer jar, add tomato, green chilli & ginger, grind it to a fine puree, keep aside.

* Step 4

Take a deep bottom pan, add oil, heat it. Add choti elaichi & dalchini, saute it for a minute.

Now add onion & dry red chilli, stir fry it until light brown.

In goes garlic, saute it until rawness is released.

Add in tomato puree, stir fry it for 2 minutes, also add salt.

Add chicken now, stir fry it for a minute. Lower the flame, cover it with the lid, cook it until chicken is almost cooked.

Open the lid, increase the flame, add garam masala powder & kasoori methi, mix it well.

Now add rice, mix it well. Stir fry it for 2 minutes.

Add 3 cup water, mix it well. Now add ghee also. Give a boil, cook it until water is absorbed.

Lower the flame, cover it with the lid, cook it till done. Do not stir in between.

Take out in a serving dish, garnish it with chopped dhania patta. Can be served along with some salad or chutney..

Cooking instructions

* Step 1

Wash rajma, add in a pressure cooker, add 1.5 cup water & 1/2 tsp salt.

* Step 2

Place the lid, give 6 whistles at high flame. Lower the flame now, cook it for 10 minutes. Turn off the flame, allow it to depressurise naturally. Take out in a bowl, keep aside. Just check... Rajma should not become mushy.

Take a deep bottom pan, add good amount of water, rice, 1 tsp salt, 1 tbsp oil & pinch of haldi powder.

Cook it till half done.(Al Dente). Strain it, keep aside.

Take a big pan, add ghee, heat it. Add whole garam masala, saute it for a minute.

In the mean time, take good amount of oil in another wok, heat it. Fry sliced onions until brown. Take out in a bowl. Keep aside.

Prick aloo, add in a bowl, sprinkle some salt, toss it, keep aside.

* Step 2

Take a wok, add oil, heat it. Add aloo, stir fry it until light brown. Take out in a bowl, keep aside.

Add rest of the oil in the same wok, heat it. Add in whole garam masala, saute it for a minute.

Add hing & zeera, let it splutter.

Open the lid, increase the flame, add kasoori methi, mix it well.

* Step 1

Wash Dal's, soak them in water overnight. Strain them, add in a wet cloth, tie it, keep aside. Dals will become sprouted. Take out in a bowl, keep aside.

* Step 2

Take a pressure cooker, add dal, lil salt & 1/2 cup water, place the lid, give 1 whistle.

Switch off the flame immediately. Allow it to depressurise. Take out in a bowl, keep aside.

For Misal Masala...a).. Take a pan, heat it, lower the flame.

B). Add dhania & zeera, stir it for a sec. Add dry chilli, give a stir. Now add onion & all the other given ingredients.

C). Dry roast at low flame until light brown. Cool it. Grind it to a fine paste. Keep aside.

Now take a wok or deep bottom pan, add oil, heat it. Add rai, let it splutter. Add curry leaves also.

Now add onion, stir fry it until brown. Add salt & red chilli powder, stir it. Add lil water to avoid burning.

Now add Misal Masala, add lil water, stir fry it at moderate flame. Cook it till oil has oozed out.

Increase the flame add boiled dal, stir it for a minute. Add lil water if required, give a boil.

Lower the flame, cook it covered for 7 minutes. Gravy should be a lil thin (not runny).

Garnish it with some farsan or chatpata chanachur, chopped onion, green chili chopped, & chopped dhania patta.
