* Step 1

Wash the veggies, keep aside.

* Step 2

Shallow fry broccoli florets in 1 tbsp oil till light brown. Keep aside.

* Step 3

Take a wok, add oil, heat it. Add hing & zeera, let it splutter.

* Step 4

Now add onion, stir fry it until light brown. Add green chilli now.

* Step 5

In goes veggies, stir it for a minute. Add ginger garlic, stir fry it for a minute.

* Step 6

Add haldi powder & dhania powder, mix it well. Add salt now. Stir it for a minute.

* Step 7

Lower the flame, cover it with the lid, cook it until veggies aur almost cooked. Stir in between.

* Step 8

Open the lid, increase the flame, add garam masala powder, stir fry it until dry.

* Step 9

Turn off the flame, cover it for a minute.

* Step 10

Take out in a serving bowl, have it with Roti or Paratha.

Ingredient

1/2 cup

black rajma,

4 tbsp

desi ghee,

as per taste

Cooking instructions

* Step 1

Wash rajma, add in a pressure cooker, add 1.5 cup water & 1/2 tsp salt.

* Step 2

Place the lid, give 6 whistles at high flame. Lower the flame now, cook it for 10 minutes. Turn off the flame, allow it to depressurise naturally. Take out in a bowl, keep aside. Just check... Rajma should not become mushy.

Wash rice, soak in water for 1 hour. Strain it. Keep aside.

* Step 4

Take a deep bottom pan, add good amount of water, rice, 1 tsp salt, 1 tbsp oil & pinch of haldi powder.

* Step 5

Cook it till half done.(Al Dente). Strain it, keep aside.

Take a big pan, add ghee, heat it. Add whole garam masala, saute it for a minute.

Now add hing & zeera, let it splutter.

Add in ginger garlic, saute it till brown.

Now add green chilli paste, give a stir.

In the mean time, take good amount of oil in another wok, heat it. Fry sliced onions until brown. Take out in a bowl. Keep aside.

Now add rice & rajma, stir fry it for a minute.

Add lil salt & garam masala powder, give a stir.

In goes the brown onion, mix it well.

Mix milk & fresh cream, add in the rice.

Lower the flame, cover it with the lid, cook it till done. Do not stir in between.

Turn off the flame, open the lid after 10 minutes.

Take out in a serving dish, garnish it with chopped dhania patta.

Take a mixing bowl, add aloo & all the given ingredients of marination, mix it well. Keep aside for 15 minutes.

Open the lid, increase the flame, add marinated aloo, mix well. Stir fry it for a minute. Cook it covered at low flame until oil has oozed out.

Place the lid, give 3 whistles at high flame. Lower the flame now, cook it for 10 minutes.

Take out in a serving bowl, garnish it with onion roundals & slitted green chilli.

Cooking instructions

* Step 1

Take a mixing bowl, add both Dal, wash it nicely. Soak in water overnight. Strain it, keep aside.

Take a pressure cooker, add dal, hing, salt, haldi powder & oil, add 4 cup water. Place the lid, give 5 whistles at high flame. Lower the flame, cook it for 10 minutes.

* Step 3

Turn off the flame, allow it to depressurise naturally.

* Step 4

Open the lid, whisk dal gently. Take out in bowl, keep aside.

Take a pan, add ghee, heat it. Add hing & zeera, let it splutter.

Add onion, stir fry it till light brown.
