1 . Gobhi Aloo Sokha

Ingredient

3 tbsp

mustard oil

1/2 tsp

ginger paste

to taste

Cooking instructions

* Step 1

Wash aloo, keep aside. Take a pan, add water accordingly, boil it, add gobhi, boil it for 2 minutes, strain it, keep aside.

* Step 2

Take 1 tbsp oil in a wok, add gobhi, fry it till light brown.

* Step 3

Add rest of the oil in the same wok, heat it, Add onion, stir fry it until light brown.

* Step 4

Now add veggies, stir fry it for a while.

* Step 5

Add ginger garlic paste, stir fry it for a while.

* Step 6

Now add salt, haldi & dhania powder, stir it for a minute.

* Step 7

Lower the flame now, cover it with the lid, cook it till aloo is almost cooked. Stir only once in between.

* Step 8

Open the lid now, add tomato & green chilli, cover it again, cook it till tomato becomes tender.

* Step 9

Open the lid now, stir fry it till water evaporates.

* Step 10

Increase the flame, give a quick stir, cover it again. Switch off the flame now.

* Step 11

Open the lid, add some chopped dhania patta.

* Step 12

Take out in a serving bowl, have it with Roti or Paratha.

Karela is a very healthy ingredient... rich in many nutrients.

Ingredient

mustard oil

Cooking instructions

* Step 1

Wash karela & onion, keep aside.

* Step 2

Take oil in a wok, heat it, add methi dana & kalaunji dana, let it splutter.

* Step 3

Add haldi powder, sauté it for a sec.

* Step 4

Now add karela & onion, add salt, stir fry it for a while.

* Step 5

Moderate the heat now, cover it with the lid, cook it for a while or till half done.

* Step 6

Add green chilli & dhania powder, give a stir, again cover it, cook it at moderate flame.

* Step 7

Cook it till karela becomes tender.

* Step 8

Now add saunf powder, cover it again, cook it for a while at low flame.

* Step 9

Increase the flame now, stir fry it for a while.

* Step 10

Take out in a serving bowl, have it with Paratha.

Ingredient

4 tbsp

mustard oil

1/2 tsp

ginger paste

1 tbsp

onion paste

Cooking instructions

* Step 1

Peel arbi, wash it, prick it, keep aside.

* Step 2

Take a pan, add 1 tbsp oil, heat it, add arbi, fry it till golden brown. Keep aside.

* Step 3

Take a pressure cooker now, add oil, heat it.

* Step 4

Add ajwain, let it splutter.

* Step 5

Now add ginger garlic paste, add lil water, sauté it for a while.

* Step 6

Add onion paste now, again add lil water, stir fry it for a while.

* Step 7

Lower the flame now, cover it with the lid, cook it until brown. Stir in between.

* Step 8

Now add haldi, dhania & red chilli powder, add lil water also, increase the flame, cook it open till oil separates.

* Step 9

Now add salt & garam masala powder, stir it for a while.

* Step 10

Add arbi now, give a stir.

* Step 11

Lower the flame now, cover it with the lid, cook it until oil separates.

* Step 12

Open the lid now, increase the flame, stir fry it for a while.

* Step 13

Add boiled water accordingly so as to keep a lil thick gravy.

* Step 14

Place the lid now, give 4 whistles at high flame.

* Step 15

Lower the flame now, cook it for 5-7 minutes.

* Step 16

Switch off the flame, open the lid after 5 minutes of cooling.

* Step 17

Take out in a serving bowl, garnish it with chopped dhania patta.

* Step 18

Serve it with Roti or Paratha..

* Step 1

Take a wok or pan, add oil, heat it. Fry kathal pcs at high flame till light brown. Keep aside.

* Step 2

Take a pressure cooker, add oil, heat it.

* Step 3

Add ginger garlic paste, add lil water also, sauté it for a while.

* Step 4

Add onion paste, again add lil water, stir fry it for a while.

* Step 5

Lower the flame now, cover it with the lid, cook it until brown.

* Step 6

Now add haldi, dhania & red chilli powder, add lil water, give a stir.

* Step 7

Cook it at low flame till oil separates.

* Step 8

Add garam masala powder & salt, give a stir.

* Step 9

Add kathal pcs, stir it nicely at high flame.

* Step 10

Lower the flame now, cover it with the lid, cook it until oil separates.

* Step 11

Remove the lid now, increase the flame, give a stir again.

* Step 12

Now add boiled water accordingly so as to keep a lil thin gravy (not runny).

* Step 13

Place the lid now, give 3-4 whistles. Lower the flame now, cook it for 15-20 minutes.

* Step 14

Switch off the flame now, open the lid after 5 minutes of cooling.

* Step 15

Take out in a serving bowl, garnish it with chopped dhania patta.

Have it with Roti or Paratha.

Ingredient

4-5 tbsp

mustard oil

2 tbsp

onion paste

2 tbsp

dahi/curd

2 tbsp

fresh cream

To taste

desi ghee

Cooking instructions

* Step 1

Take a wok, add oil heat it.

* Step 2

Add whole garam masala, saute it for a while.

* Step 3

Now add sliced onion, stir fry it till golden brown.

* Step 4

Add chicken now, stir fry it till light brown.

* Step 5

Add ginger garlic paste, sprinkle some water, stir fry it for a while.

* Step 6

Add onion paste, stir fry it for a while.

* Step 7

Lower the flame now, cover it with the lid, cook it till onion turns brown. Stir in between. Sprinkle some water if required.

* Step 8

Open the lid, add haldi, dhania & red chilli powder, again sprinkle some water, stir it.

* Step 9

Cover it again, cook it till oil separates.

* Step 10

Add salt now. Give a stir. Add dahi & fresh cream, stir it nicely.

* Step 11

Now cover it with the lid, lower the flame, cook it till oil has oozed out.

* Step 12

Open the lid, increase the flame, add garam masala powder, give a stir.

* Step 13

Now add lil water, lower the flame, cover it with the lid.

* Step 14

Give a dum for a while so as to keep the dish dry.

* Step 15

Add desi ghee in between. Cook it for 5 minutes.

* Step 16

Switch off the flame, open the lid after a while.

* Step 17

Take out in a serving bowl, garnish it with chopped dhania patta.

You can add a lil dhania patta while cooking to get the extra flavour.

* Step 19

Serve it with Roti or Paratha or Nan..
