* Step 1

In a mixing bowl, add in the flour, yeast, cardamom powder, ginger powder, salt, sugar and cinnamon powder. give a thorough mix.

Add in the margarine and the egg and mix to a crumbly texture

Add in the milk bit by bit as you mix until the dough comes together. transfer to a dusted work surface and knead for at least 8 minutes. place in a dusted bowl, covered and let sit for 45 minutes as it proofs

Remove and knead it a little before rolling it to a log shape. using a sharp knife, cut the dough as shown

Transfer the dough into a greased bread tin and let proof for at least 30 minutes. apply some eggwash generoudly.

Bake in a 180 degree celcius preheated oven for 25 - 30 minutes

Cooking instructions

* Step 1

Mix the flour, sugar, salt and yeast

Mix the margarne with the warm water. have your milk ready warm too.

Create a well in the flour mixture and pour in the water and the milk, mixing using a spatula.

As soon as the dough comes together, transfer it to a dusted surface and work on it for 10 minutes. mold it tightly to a ball shape.

Place in a dusted container and allow to proof for at least 40 minutes while covered in a warm place.

Punch it down and mold to desired shape and transfer it to your greased tin. let proof for another 20 minutes, before baking in a 170 preheated oven for 25 = 30 minutes

Remove from oven and brush some margarine on top immediately.

* Step 1

Peel, remove seeds and chop the pumpkin into small pieces. Wash and place in a sauce pan with water to boil till marshy. drain the water and allow to cool in a larger mixing bowl

Measure 3 cups flour and sieve into the mixing bowl. add in the salt and 2 tbsp oil then mix. add in the milk little by little as you knead till the dough comes together. place on your work surface and knead some more till you get nice smooth dough. Place in a greased tin and cover with a damp cloth. let rest for at least 15 minutes (this softens the dough)

Roll out the dough to a large circular shape, about 1/2 centimetre thick, smear some oil evenly and cut into strips. roll up the strips to form a pinwheel design
